There’s no need for guilt with my healthier, easier recipe for red velvet cupcakes. You’ll only have to wash a bowl and a measuring cup and while most recipes call for eggs and lots of butter, my healthy recipe uses no eggs and only one tablespoon of butter (in the frosting) but the cupcakes are moist and delicious. I made these cupcakes for my Mom’s birthday and they were delicious! I am planning to make them again for the Fall Harvest event at our church. The amount the recipe makes and the amount of time to cook were exactly correct. I always appreciate it when a recipe has the specification right. And the cupcakes were really good. Thanks Jenny!
