I made it to 77 with only the cooking skills to sometimes microwave oatmeal in the morning and burn an occasional hotdog or hamburger on a barbeque grill. Then the pandemic struck and awakened my irrepressible craving for daily fresh bread.
Rather than risk the remaining life I still cling to with dangerous forays to germ-laden supermarkets or bakeries, I searched YouTube to see if it was conceivable for someone with a complete lack of cooking skills to bake bread at home. Luckily yours was the first video I stumbled on — which shows that no amount of careful planning beats dumb luck.
Repeatedly I watched your no-knead bread-making video, chuckling each time at your cute remark about cleaning the writing off the baseball (as a good studio audience is supposed to do) and gained the courage to meticulously follow your technique. The result astonished me! I quickly and easily made the most delicious fresh artisan bread I’ve ever savored. Worthy of even the most pretentious boulangerie.
Now I have delicious fresh artisan bread every day. And you emboldened me to cook other things. I made your quick pizza. It’s better than my favorite pizza parlors (to say nothing of delivery pizza where you might get more sensual pleasure from eating the cardboard box it arrives in). Just so you know, I was raised in Nu Yawk City, so I really know good pizza.
With your online guidance I’m cooking and baking the foods I love, and love doing it. You’ve taught me how easy, fun and delicious It is to cook and bake. Candidly, I simply can’t believe that I can do this.

In my latest baking, instead of using (hot) tap water, I substituted the saved (reheated) water from boiling potatoes. The starch from the potatoes added a “nice” flavour to the no knead bread & created a most delicious bread. I used my Kitchen Aid cast iron pot (fm CTC) but upped yr ingredients to 1 1/3 times eg 4 cups flour, 2 C potatoe water etc to fill my oval pot. Ciao fm Kitchener.”

“Hi Jenny, I made your chocolate zucchini cake recipe. I tweaked it, using half a cup of coconut flour in place of regular flour. I think my zucchini was a bit dry and added a couple of tablespoons of water. I think I might add 2 tablespoons of cream cheese to add a little more moisture to the mix. Or serve with a dollop of whip cream or vanilla ice cream. I also used a bundt pan – will need to double the recipe to have it a traditional size bundt cake. Mine is a little shorty as you can see! “I Think it’s the Aldi Yeast ?- Well, bummer.  I have tried Whole Foods to Fresh Market, Publix to Kroger, Sprouts to Walmart, Target, and beyond.  NO yeast to be found, but finally found some at Aldi. Alas, no Gelson’s here and I don’t know if this yeast is old because the date is funky plus it’s made in Turkey!  Oy vey. Anyhoo, this is the wheat bread rise after 45 minutes.  Bummer! What a waste. ~ Oh, I’m so sorry. I feel your pain, I really do. My only suggestion is to proof the yeast (google “how to proof yeast” and maybe it will be good and something else was the problem, possibly the liquid wasn’t warm enough. Meantime, you could still leave it out overnight to see if it rises (nothing to lose). ?~ jenny“Well, it’s a miracle! I thought my low rising dough might be a throw away, then saw again that the bread rises a lot in the oven. So I tossed it in.  Indeed! ~ What a beautiful pie, thank you! I reheat by putting foil inside the pan and pushing it up against the exposed  filling so the filling stays put,  and I leave the top crust exposed. I’m Always Learning

Jenny Can Cook Best RecipesThese are just some of the recipes that I have either improved or simplified since they were originally posted. I’m always learning and improving my skills so if anyone is using a recipe that was posted a while ago or if you printed it some time ago, please check the “Recipe Changes/Fixes” category in my blog.

So far I have made changes to about 100 recipes but many of the changes are minor, like increasing salt or reducing sugar but others, like my 15-Minute Veggie Pasta, now use an easier, faster, all-in-one-pan method. I’m always looking for ways to make something healthier or faster or to simplify the process so every time I cook, if I try a better way and it works, I adjust the recipe and share the exact changes I made in the blog.

I encourage all of my regular cooks to occasionally check the “Recipe Changes” category here in my blog to make sure you are using the newest and best version of each recipe. Christmas Snowball Cookies are So Easy To Make

Easy Christmas Snowball CookiesEveryone is making these easy Christmas cookies but it’s not even Thanksiving yet! What gives? I guess you’re all just testing them out to make sure they’ll turn out during the holidays. The only way to know for sure is to test out the recipe in advance and eat as many as you can because, you know, you can’t be too sure. I’m “testing them out” today and I can report that they did turn out really well. It’s just a public service I thought I should provide for everyone. 🙂 I can confirm that this is the easiest recipe ever for Christmas pecan balls, so easy that even amateur cooks are making them. “I didn’t know they were so easy to make,” they say.

And there’s more. These delicious little Christmas treats keep really well so you can make them in advance, and they freeze well too. It just keeps getting better. No Dutch Oven / No Knead Bread

No Dutch Oven No Knead BreadFor anyone who does not have a Dutch oven but wants an easy way to make crusty homemade bread with no kneading and almost no work at all, look what I just made on a baking sheet! It was so easy and the loaf was crusty and delicious.

A Dutch oven with a lid creates steam inside the pot, which produces that crispy crust so I create steam inside the oven by placing a small 5 by 9-inch pan in the oven while it’s preheating. Then when I place the bread in to bake, I pour some boiling water into the little hot pan and whoosh – steam goes all over the place. I close the oven door right away to keep the steam inside and let it bake.

Whole Wheat No Knead Bread (updated)

100% Whole Wheat No Knead BreadI found a better way to make my 100% whole wheat no knead bread. I’m using the same ingredients but I recently found that you don’t always need the resting period for no knead breads while the oven heats up so I tried it with this whole wheat version and it turned out great. And it saves time. I plan to experiment with all my other no knead breads and will report back on each one if they are just as good without the resting time.

I get the best result in my 3 1/2-quart Dutch oven so the bread can not spread too much. Keep in mind that this is a heavier, more dense loaf than the original white flour version but if you want an easy, healthy, high fiber bread recipe, this is it. The only difference between this recipe and the old one is that the old one had a 2-hour resting period before baking. So the total time for this recipe just went from 13 hours to 11 (but you’re sleeping most of this time anyway).

Make No Knead Bread in LESS THAN 2 HOURS!

Fastest No Knead Bread Ever

GOOD NEWS! There is an even faster way to make my 2-Hour No Knead Bread. Thanks to a comment by fellow baker, Terry, who simply forgot the 15-minute rest, it turns out you can do without it. So the 2-hour recipe now can be made in 1 3/4 hours! When I saw Terry’s comment I immediately tried it myself. And it worked. I just left out the 15-minute rest and took it straight from the mixing bowl after the one-hour rise, folded it over a few times on a floured surface, and placed in on a sheet of parchment paper. I lifted the parchment and dough, placed it in my preheated Dutch oven, and baked as usual. Look at how well it turned out!

Most bread connoisseurs will agree that the longer the dough rests, the better flavor the bread will develop. This is true but some days I want bread and don’t have much time and I thought this loaf tasted really good.  I’m not sure if I should adjust the recipe so in the meantime, here is all you need to do: 1) Preheat your oven 15 minutes earlier. 2) Skip the 15-minute rest before baking.

I Made Ribs

Best Baby Back Oven RibsI made ribs this weekend with my own rub and sauce and I can see why the video has 5 million views and 35,000 comments on youtube and why my recipe has garnered over 800 comments here on this website. They are fantastic! I always make them in the oven now because I don’t like cleaning the grill. And this time I couldn’t find the silver skin on the back to remove and they were still just as tender as ever.

In case anyone has not tried this easy, foolproof way to make the most delicious fall-off-the-bone-ribs, try this recipe. Use my rub and sauce and you won’t be disappointed.
