My Go-To Dinner

Easy Veggie Fried RiceI’ve been busy the past month and when there’s not much time to cook, I still cook. And tonight I made my veggie fried rice. It’s my go-to dinner when I want a quick and healthy meal. I always have broccoli and peppers on hand I always keep frozen peas in the freezer.

It’s a light meal with protein from the eggs and a bounty of nutrients from the vegetables. This time I used broccoli, spinach, peppers, and peas. We had my peanut butter cookies for dessert.

Whole Wheat No Knead Bread (updated)

100% Whole Wheat No Knead BreadI found a better way to make my 100% whole wheat no knead bread. I’m using the same ingredients but I recently found that you don’t always need the resting period for no knead breads while the oven heats up so I tried it with this whole wheat version and it turned out great. And it saves time. I plan to experiment with all my other no knead breads and will report back on each one if they are just as good without the resting time.

I get the best result in my 3 1/2-quart Dutch oven so the bread can not spread too much. Keep in mind that this is a heavier, more dense loaf than the original white flour version but if you want an easy, healthy, high fiber bread recipe, this is it. The only difference between this recipe and the old one is that the old one had a 2-hour resting period before baking. So the total time for this recipe just went from 13 hours to 11 (but you’re sleeping most of this time anyway).

Homemade Pierogi

Homemade Pierogi

Quick & easy pierogi? There is no such thing. But if ever a  recipe was worth the time, it’s homemade pierogi. I only make potato & cheese pierogi because that’s what I grew up on. My dad taught me how to make them and I’m so glad I shared the recipe because I wasn’t sure if anyone would want to put in the effort. It turns out a lot of people do. There are hundreds of comments and over a million people have watched the video.

There are two things to make: the dough and the filling. The mashed potato filling is easy to make but the dough takes more time and it’s important that the filling stays inside the dough when they are boiled. Before boiling, the pierogi must be kept apart on a floured towel because if they touch each other they will likely stick and create an opening in the dough. That would result in them breaking apart when they’re boiled. I line a baking sheet with a dish towel and sprinkle it with flour and place them on the towel, not touching.

How To Make PierogiI boil mine in a medium saucepan so I only boil 4 or 5 at a time, making sure at first that they don’t touch each other in the water. Pierogi take about 3-4 minutes to cook and when they’re done I remove them to an oiled baking sheet and put the next few in the boiling water. (By the way, “pierogi” is plural – one is called a “pierog” but people often use “pierogies” as the plural).

Best Polish PierogiOnce they’re cooked I still keep them mostly separated. There are two ways to enjoy these Polish treasures. One is to eat them right after boiling when they are soft and tender, served with sour cream and bacon bits. I rarely eat bacon but that rule goes out the window when I make homemade pierogi.

The other way is to pan fry them in a little oil or butter until they’re lightly browned and serve them with (big surprise…) sour cream and bacon bits. They are also often served with fried onions. Well I have to go now. We have leftovers. Click here for the recipe. – Jenny Jones

No Knead Multigrain Bread

Easy Mulitigrain No Knead BreadIt must be Sunday because I’m making my favorite no knead bread, the one I love having for breakfast. This easy mulitgrain loaf has two kinds of fiber, one from the oats and the other from whole wheat flour. Oats have soluble fiber and whole wheat has insoluble fiber, the perfect combination of whole grains. No knead loaves made with whole grains don’t form the lovely cracks we see in the white versions but they still form a beautifully crunchy crust.

This recipe uses the overnight method with cold water so I put it together last night before bed and baked it this morning. I’ll be saving a couple of slices and freezing the remaining slices that will last me all week, and then next Sunday….. well…. I’ll make it again. Click here for the recipe. – Jenny Jones

Healthier Hot Dog Buns

Guess what? You can make healthier hot dog buns at home and it’s super easy. I made soft whole wheat hot dog buns using my Simple Whole Wheat Bread recipe (the popular one that’s soft and delicious and takes 90 minutes) and this takes even less time because they bake in 12 minutes.

Homemade Hot Dog BunsI made the dough and instead of shaping it into a loaf, I cut it into 8 pieces. I decided to make 4 sandwich rolls and 4 hot dog buns so I shaped four into circles and four into about 7-inch long rolls. I covered them with a towel and let them rise in a warm spot until doubled (about 35-40 minutes).

Healthier Hot Dog BunsHere’s how beautifully they doubled in size.

Then I baked them for 12 minutes at 375° F. If you want to make easy, soft whole wheat hot dog buns that are healthier than any you can buy, click here for the recipe. – Jenny Jones

Spaghetti & Meatballs & Cookies

Easy Spaghetti & MeatballsI can never get enough spaghetti and meatballs. It’s really one of the best comfort foods. Most people think you have to cook sauce for hours but I will never do that when I can make delicious marinara sauce (and meatballs) in half an hour. I always use canned San Marzano plum tomatoes for my sauce.

And people think you have to brown meatballs first before putting them in your sauce but I don’t do that either. By cooking the meatballs totally in the sauce they come out super soft and delicious. We had this tonight with a salad and breadsticks. I made cookies too.

For dessert I made soft & chewy oatmeal raisin cookies – super easy. I’ll be posting that recipe soon. Meantime, if you want to try my quick and easy spaghetti and meatballs recipe, click here.Jenny Jones

Custard Filled Pączki – Polish Doughnuts

Custard Filled Polish PaczkiSomebody please stop me from eating five! These oven-baked Polish doughnuts are so light and so delicious and filled with homemade custard, well….. I can only make these a few times a year. It’s too easy to eat five. Pączki are most often filled with jam but custard is my favorite by far. These Polish doughnuts are light and airy and really simple to make.

Filling them is the hardest part and a pastry bag does make it easy. I used to use a long, slender pastry tip but I find it easier to use a wider tip, something like these:

Pączki are traditionally fried but I avoid eating deep fried food – nobody needs that. Besides, I could never eat five fried doughnuts without requiring medical care. Oven-baked is the way to go. Fill them with jam or custard. Either way you will love these delicious pączki (pronounced potnch-kee). Click here for the recipe. – Jenny Jones

I Made Apple Pie

Best Apple Pie Oil Crust

Autumn is here and that means it’s apple pie time. I always make it with an oil crust because if nothing else, it’s just easier. You can pat it into the pan but I find that rolling it between sheets of wax paper is the best way to use an oil crust, especially for the top. My apples of choice are granny smith ? and my thickener of choice is tapioca but flour works too.

Homemade apple pie is something special. We were at a social gathering last night and when desserts were set out, I told some friends I had just made an apple pie and it was cooling on the counter at home. If they wanted to, we could skip the prepared desserts and go to my house for apple pie. “Homemade apple pie? Let’s go!”

That’s the power of homemade apple pie. My husband’s two favorite desserts are my Fresh Strawberry Cake and Homemade Apple Pie. Nothing compares. I love this delicious pie and I must admit I like the power. I think I hear him in the garage right now cleaning things up. ? Click here for the recipe. – Jenny Jones

Whole Wheat Chocolate Chip Cookies

Healthier Chocolate Chip CookiesI always look for a healthier way to make all the favorite things we like to eat and chocolate chip cookies are at the top of my “favorite things to eat” list. I posted my recipe some time ago but when I baked them today, I made a couple of small improvements. I reduced the oil and salt a little and I prefer them the new way. (the changes are noted in the recipe).

Anyone looking to bake with whole grains can make my version that uses part whole wheat & part all purpose flour. But these healthier cookies can also be made using only all purpose flour but honestly, there’s not much difference so I say go with the whole wheat version.

While most chocolate chip cookie recipes start out with a stick of butter, my recipe uses only three tablespoons of butter. I’m still not convinced we should be eating lots of butter as some people believe but when I use butter, I’m going with the grass-fed kind.

I always put nuts in these cookies and whether you use walnuts or pecans, I highly recommend toasting the nuts first. Toasting intensifies the flavor and it will add a lot to these delicious cookies, especially pecans. For chocolate chips, the darker the better for some health benefits.

Sunday Breakfast

Oatmeal Pancakes RecipeI want to remind everyone how easy it is to make pancakes from scratch. How easy? Twelve minutes. Yes, it takes just 12 minutes to make my whole grain oatmeal pancakes. It was our Sunday breakfast, served with a little butter and a lot of real maple syrup.

These easy, healthy pancakes are made with buttermilk, oats, and whole wheat pastry flour so they are 100% whole grain. Buttermilk really makes the best pancakes! My usual breakfast is a hard-boiled egg, a slice of my homemade bread, a little fruit, and a cup of tea, but Sunday is the day for special treats – I should have called it Sunday brunch because we didn’t eat until after 11:00.

I found these pretty plates at Walmart so I took a new picture. Next Sunday, or maybe tomorrow, if you want a healthy whole grain breakfast that’s fun and easy, click here for the recipe. – Jenny Jones
