Whole Grain Pancakes

Whole Grain PancakesFiber is good. We need fiber. It helps with weight loss because it keeps you full longer, plus it keeps your blood sugar stable. So it makes sense that morning is the best time to have a healthy, high fiber meal. But this does not mean eating something that tastes like toasted particle board or a bowl of spackle!  With me, it means light and fluffy pancakes.

Yes, even 100% whole grain pancakes can be light and fluffy if you use buttermilk – real buttermilk from the store, not the one they SAY you can make by adding lemon juice to a cup of milk – hogwash! That is not a substitute for buttermilk, it’s only a cup of lemon-flavored milk. So get some real buttermilk and make my easy, light & fluffy, delicious, healthy whole grain pancakes.  And here’s even better news: You can use extra-light olive oil… or canola… or any oil of your choice. Easy Granola

If you make homemade granola just once, you will never buy it in the store again. My easy healthy granola uses only six ingredients and you can put it together in five minutes.  It’s one of my top three most watched youtube videos. And the taste… is downright addictive!  This healthy granola is crunchy with lots of nuts and made with coconut and real maple syrup. Have it as your morning cereal or as a crunchy topping on yogurt. My Coffee Cake just got a Jenny Jones Makeover

Chocolate Chip Coffee CakeIf you know me, you know I am always trying to eliminate butter and it’s not always easy with baking. But my Streusel Coffee Cake just got a Jenny Jones Makeover! For starters, the chocolate chips used to be optional but now I’m calling it a Chocolate Chip Coffee Cake because that one tablespoon of mini chocolate chips needs to be there.

Now here’s the best part: no more butter. Well, there was only a tablespoon of butter in the old recipe so it wasn’t a lot but I always thought you needed butter to make a good streusel topping but not so, my health-seeking friends. I’ve discovered that my transfat-free spread (Canola Harvest) works beautifully in place of the butter so now there is no butter in this delicious healthy coffee cake with a crispy, nutty, chocolatey topping. Spaghetti with olive oil and garlic

Spaghetti with Olive Oil & GarlicThere’s nothing like the smell of garlic cooking on the stove. I can almost smell it just looking at this picture. As promised, I am sharing a very simple recipe for Spaghetti with Olive Oil and Garlic, the perfect side dish for just about anything. How fast is it? You’ll be waiting for your spaghetti to boil! It’s a simple recipe where you heat the olive oil and garlic for about five minutes, until the garlic is golden and fragrant, and then stir it into the spaghetti. Done.

It’s the kind of thing a fancy restaurant would call “Aglio e Olio” and charge you $18 for but you can make it at home for about $1.50.  And the taste is out of this world! By the way, it’s doesn’t have to be spaghetti – any pasta shape you have on hand will work… penne, linguini, angel hair, etc.. Better than takeout – ready in less than 20 minutes.

Best Orange Chicken RecipeI made one of my favorite meals ever for dinner today, my Orange-Sesame Chicken. If you like Chinese food then you know that much of it is deep fried but this chicken is just lightly sauteed and the sauce, made with fresh-squeezed orange juice, is fantastic. It takes longer to cook the rice than it does to make this healthy meal so be sure to start your rice first.

Today, I made fragrant jasmine rice. I always include a side of broccoli and you can add your broccoli to the rice during the last 5 minutes to save extra dishes. This orange-sesame chicken is an easy, healthy recipe that actually cooks up in less than 10 minutes, but you have to wait for the rice to cook! Click here for the recipe. – Jenny Jones

Greek Lemon Potatoes

Greek Lemon Potatoes

My stepmom is Greek so I have grown to love Greek food (and her, too!). She told me that you can cook almost any Greek dish with olive oil, lemon, and oregano and this delicious side dish is the perfect example. The potatoes are marinated and roasted in the oven until they’re tender inside and the edges are crispy and golden. And wait until you taste this delicious combination of fresh lemon juice, garlic, and oregano.

Sesame Seed Breadsticks

For someone who likes crunchy food, my sesame seed breadsticks are a must. You simply cannot buy breadsticks like this anywhere and when they’re fresh out of the oven (after they stop their snap, crackle, and popping) it’s hard not to eat half the batch right there. I make 15 at a time and when there’s only one left, I make more. If you haven’t tried this easy recipe, you’re missing out. Try My Easy Potato Pancakes

Best Recipe Potato PancakesMy dad used to make the best potato pancakes but my recipe has a secret he never knew – it’s in how you drain the potatoes. Also, his method took some work but that was before food processors were invented. I used to help him grate the potatoes on a box grater but now, thanks to my food processor,  I have an easy way to make fantastic Polish placki kartoflane and mine are healthy, never greasy, and super easy. If you don’t have a food processor, you can prep the potatoes old school style, grating by hand, and you’ll still get the best potato pancakes ever.

I’ve given up ordering these at a deli because they’re practically deep fried! Mine use very little oil because you don’t need it. To me, they’re best with a little (reduced fat) sour cream, and when you have leftovers, save them for breakfast. My mother used to slice up the  leftovers and cook them into scrambled eggs for an awesome breakfast, which is what I’m having right now! Click here for the recipe. – Jenny Jones
