BARB (from Canada) MADE MY CINNAMON ROLLS

“Hi Jenny!  My hubby has a sweet tooth and has been craving cinnamon rolls of late. We both lost our jobs this past year, so I’ve been making everything at home from scratch for a change. I’ve lots of time for cooking now and we are addicted to all your easy bread recipes! I was reticent about cinnamon rolls, however. I thought they’d be too tricky for me!  BUT I watched your video, taking note of the tips for not rolling too tight and using dental floss for slicing. It was easy!  The only extra step I did was giving the dough a second rest after I rolled it out. It wouldn’t “relax” and kept shrinking back up again. But after I gave it the second rest for a few minutes, it co-operated with me. I was able to roll it a second time to the correct dimensions with no problem. I’ve attached photos showing them in the pan before rising and after rising, then after baking and glazing.  My husband was very happy and didn’t realize I’d used no butter at all. Just light olive oil in the dough, then spread with a little Becel margarine before filling.  We ate them all by the next day!  I get more confident in my kitchen skills with every recipe of yours that I try.  Thanks so much, Jenny … God bless! – Barb from Ontario.”

My Homemade Italian Seasoning Mix

Homemade Italian Spice MixNEW RECIPE: One day I was out of my store-bought Italian seasoning mix and needed some for dinner. I thought about changing out of my pajama bottoms and favorite T-shirt to go to the store but that sounded like more work than making spaghetti and meatballs from scratch. So I decided to try making my own spice mix. That was the last day I ever used store-bought Italian seasoning mix. I can’t explain why but the mixture I came up with was just…. better. It smells better, tastes better, and smells fresher. It may be because I use a lot of basil, which is super fragrant. I just put all the ingredients on a piece of wax paper and pour it into a small jar, shake well, and it’s done. Homemade always seems to be better, even for spices. (not so much for hair coloring!)

In fact I made two batches, how could I not! 😉 I’m  telling you this is such a wonderful recipe, the pumpkin bars come out soooo moist. I was also quick to take pictures this time, they really do NOT last long. In one batch I added dark chocolate chunks, the other one has toasted walnuts. I made your QUICK AND EASY SPROUTED WHEAT BREAD. I’ve made it many times before with success in a regular size loaf pan. I sometimes add some sort of  seeds to the top of the loaf. This time I tried it in my two smaller pans, 7.75″ X 3.75″ X 2.5″. The loaves came out great, I topped one with pumpkin seeds. The bread always comes out so soft in the middle, yummy indeed!  Thank you for making “bread-baking”  so much fun Ms. Jenny! 😀 Wishing you and Denis a lovely day! 🌻 Happy baking! ~ Dalila G.”

I Made Apple Pie

Best Homemade Apple Pie

My homemade apple pie is a special treat, which I don’t make very often. Usually, it requires a special occasion and today I washed my hair so I needed to make an apple pie! 🙂 Granny Smith apples are my fruit of choice and I always use a full three pounds! Whoever invented the phrase, “easy as pie,” must have meant the eating part. Making pie, especially apple pie with all the chopping, is not easy but it’s worth every minute! 🍏 It makes an incredible homemade gift but I’ve never been able to let one go.

My pic of the month is from Mil in Canada. She used my Crispy Apple Tart recipe using fresh peaches and it looks so good! At first I thought it was an apple tart but when I saw it was made with peaches, well I’ll be trying my own version with peaches next time. “The tart tastes fabulous and the apricot jam coating on top just elevates it even more,” said Mil. I picked this photo of my Easter Bunny Buns because it made me smile right away and also it reminded me that it doesn’t have to be Easter to make these adorable (and delicious) buns. The picture was sent in by Sandy, who made them for her grandchildren. She said they “absolutely loved them!” And so do I. 🐰❤️🐰

“I doubled the recipe (except the yeast and salt) and used amounts of whole wheat, white spelt and AP flour as I had available. This was the easiest bread recipe I have ever worked with!  I have been baking bread for the last 10 years. I only use store bought when in a pinch. You can imagine I’ve tried a lot of recipes, over the years. I’d finally settled on a very popular (Allrecipes) recipe. Though the flavor  of that bread is good and it’s full of grains, it’s very time consuming and my results have not been consistent. So, I searched and saw the pic of your bread and, it looked so perfect, I decided to try it. I followed the recipe but added a variety of grains and seeds. This is the best rise I have ever gotten (looks exactly like the picture) and the loaves are so flavorful. The texture is perfect. “Dear Miss Jones, I wanted to share not only my picture of your One Bowl Yellow Cake, but also the story behind my making it. Since January, I have been in West Africa on a mission trip. I work a good deal in the kitchen and needed a simple cake recipe, preferably without butter, (we don’t have that around much), without a lot of eggs and which wouldn’t change too much if I used another flavor than vanilla (which we don’t have). Your oil cake was perfect. We were wanting a cake with Malibu rum, so I replaced the vanilla with that. I doubled the recipe to make it two layers, but had to do one 8″ and one 9″ layer, since we only had one of each size pan — you get creative in Africa! For the bottom (9”) layer, I placed sliced bananas in the bottom of the pan before I poured in the batter.

They turned out fabulously! Not perfectly shaped (from using parchment paper instead of grease) and one was a little slanted (the oven is gas, so who knows what happened), but they were so light and spongy! (Our baking powder cones in packets here and I wasn’t sure how much was in each one; I put two in the batter, so maybe that’s why they were so light!) The bottom of the 9″ layer turned into the middle of the cake; I brushed the layers with more Malibu and made a flour frosting, again with the Malibu, to cover it, and decorated it with more sliced bananas. I wanted to make a coconut-flavored sugar glaze to drizzle around the edges, but it turned I sugar, so I broke it up and sprinkled it on top. Yesterday, I made it again, this time with strawberry flavoring, strawberry frosting, and chocolate hazelnut spear and caramelized bananas between the layers. Two pictures are attached; thank you for your fabulous recipe, which can even be made in the rainforest! Sincerely, Sarah McDonald.”

“The first two pictures are the unsuccessful ones. The second two are the good ones. I tried this a few times and got very wet dough and uncooked interiors. Then I changed the water-to-flour ratio to 80% and I got it! Bubbles after the first proof, drier and easier to handle dough, air pockets and dry inside the bread after cooked and cooled completely! I live in Malaysia so the flours I get are of different compositions. The all purpose flour here has very low protein content, about 9% and bread flour is higher. So I mixed the both. I put about 70g all purpose and 290g japanese bread flour with 288 ml water. To improve the bread taste, you can leave the dough longer (4 hours) in room temperature (here is about 32 Celsius). I discovered this coincidentally. Happy that I managed to make a bread from scratch! Thanks! I have enjoyed this bread making challenge. Best regards, Yi Lin.”

I made your hot dog buns this weekend.  I ran out of eggs so didn’t do the egg wash.  They didn’t look as pretty as yours but they were delicious. I used them to make Connecticut (aka “hot”) lobster rolls, which we much prefer to the cold lobster rolls with mayo dressing. Anyway, the rolls were perfect for these!”

Safe Travels, My Little Spatulas

Jenny Can Cook SpatulasCooking is fun. Moving is not. We’ve been looking for a long time and I finally found a dream kitchen that I want to cook in so we’re getting ready to move. I don’t remember the rest of the house but it had a bunch of rooms so I’m sure it’s going to be good. 😀  I’m excited about my new kitchen but it will take time to set things up just right so you won’t see any new recipes for a while. I’ll still be checking in every day as usual, posting your photos and answering questions when I can.

I’ve learned a few things while packing to move:

  1. I don’t wear belts any more.
  2. I thought I was doing a better job of dusting.
  3. There may be a family of squirrels living in our garage.
  4. A man can be emotionally attached to a broken vacuum hose.
  5. Moving is a good way to test your marriage. ❤️
