I was craving a good hamburger so I made sesame seed buns from scratch and they were ready in an hour. I can’t find whole wheat flour right now so I used my white bread with egg recipe. Just before baking, I brushed the buns using beaten egg yolk with a little water and sprinkled on the seeds. You can brush with egg white, egg yolk or even a beaten egg. Let me tell you, these were some awesome burgers! I used lean ground beef and I cooked the patties in a hot cast iron skillet. I seared them first so they were beautifully browned and tasted like they just came off the grill. (I should have taken a picture but I was hungry ?)
I had all the trimmings on hand, including lettuce, tomato, onion, pickle, mustard, mayo, and ketchup. WOW! I may never cook a burger on the grill again. I also made oven fries since I had a russet potato. I peeled and sliced it into fairly thin wedges, tossed them in olive oil, salt & pepper, and roasted them in a 425 oven on a baking sheet for about half an hour. Next time I make this classic American meal (and there will be a next time) I will post it as a recipe so everyone can enjoy delicious hamburgers at home. I never made a burger in a skillet before so I even surprised myself.

I love these soft, whole wheat buns. This is the exact same recipe as my simple whole wheat bread but it’s shaped into buns and it’s faster than the loaf. If you’re a fan of my whole wheat loaf, you must try making these buns. It’s a quick and easy recipe that takes only an hour from start to finish. With summer coming and burgers about to be made on the grill, you can now have a healthier option for hamburger buns. As for sandwiches, it’s always a healthier sandwich when you use whole wheat bread.
These rolls are so soft, you might forget they’re whole wheat but if you’re not a fan of whole wheat… no problem. These turn out just as well using my simple white bread with egg recipe. And here are my hot dog buns, made from the same recipe, only made into long buns. They are also soft, whole wheat buns for a healthy alternative to store bought buns. I tried store bought whole wheat hot dog buns and they were terrible – dry and heavy. These are light as a feather but again, if you want to make them white, just use my simple white bread with egg recipe. Luckily I have no shortage of yeast as I buy small tubs and keep them in the fridge, we’ve been making lots of no-knead but thought I would give your no-yeast a try. Buttermilk is not a staple here so I used the 1tbs vinegar topped up to a cup with milk. Also had to add extra flour as I often find our plain flour is less absorbent. I made it to 77 with only the cooking skills to sometimes microwave oatmeal in the morning and burn an occasional hotdog or hamburger on a barbeque grill. Then the pandemic struck and awakened my irrepressible craving for daily fresh bread.
Rather than risk the remaining life I still cling to with dangerous forays to germ-laden supermarkets or bakeries, I searched YouTube to see if it was conceivable for someone with a complete lack of cooking skills to bake bread at home. Luckily yours was the first video I stumbled on — which shows that no amount of careful planning beats dumb luck.
Repeatedly I watched your no-knead bread-making video, chuckling each time at your cute remark about cleaning the writing off the baseball (as a good studio audience is supposed to do) and gained the courage to meticulously follow your technique. Now I have delicious fresh artisan bread every day. And you emboldened me to cook other things. I made your quick pizza. It’s better than my favorite pizza parlors (to say nothing of delivery pizza where you might get more sensual pleasure from eating the cardboard box it arrives in). Just so you know, I was raised in Nu Yawk City, so I really know good pizza.
With your online guidance I’m cooking and baking the foods I love, and love doing it. You’ve taught me how easy, fun and delicious It is to cook and bake. Candidly, I simply can’t believe that I can do this.

“Hi Jenny..again, yr no knead bread is a most wonderful & quick recipe that you have shared. In my latest baking, instead of using (hot) tap water, I substituted the saved (reheated) water from boiling potatoes. The starch from the potatoes added a “nice” flavour to the no knead bread & created a most delicious bread. I used my Kitchen Aid cast iron pot (fm CTC) but upped yr ingredients to 1 1/3 times eg 4 cups flour, 2 C potatoe water etc to fill my oval pot. Ciao fm Kitchener.”

“Hi Jenny, I made your chocolate zucchini cake recipe. I tweaked it, using half a cup of coconut flour in place of regular flour. I think my zucchini was a bit dry and added a couple of tablespoons of water. I think I might add 2 tablespoons of cream cheese to add a little more moisture to the mix. Or serve with a dollop of whip cream or vanilla ice cream. I also used a bundt pan – will need to double the recipe to have it a traditional size bundt cake. Mine is a little shorty as you can see! “I Think it’s the Aldi Yeast ?- Well, bummer. I have tried Whole Foods to Fresh Market, Publix to Kroger, Sprouts to Walmart, Target, and beyond. NO yeast to be found, but finally found some at Aldi. Alas, no Gelson’s here and I don’t know if this yeast is old because the date is funky plus it’s made in Turkey! Oy vey. Anyhoo, this is the wheat bread rise after 45 minutes. Bummer! What a waste. My only suggestion is to proof the yeast (google “how to proof yeast” and maybe it will be good and something else was the problem, possibly the liquid wasn’t warm enough. Meantime, you could still leave it out overnight to see if it rises (nothing to lose). ?~ jenny“Well, it’s a miracle! I thought my low rising dough might be a throw away, then saw again that the bread rises a lot in the oven. So I tossed it in. Indeed! I’ve never baked before quarantining, and it’s a miracle! ~ What a beautiful pie, thank you! I reheat by putting foil inside the pan and pushing it up against the exposed filling so the filling stays put, and I leave the top crust exposed. I put it in a 350 oven but don’t remember for how long. I hope that makes sense. ~ jenny
