Almond Flour Chocolate Chip Cookies

Almond Flour Chocolate Chip CookiesI was surprised how well these turned out. I never thought I could make cookies without flour but for anyone looking to reduce carbs, or wanting gluten-free cookies, you can still make delicious healthier cookies at home. These really are chocolate chunk cookies because I rarely use chocolate chips any more, preferring to use a healthier dark chocolate bar. To get the health benefits of dark chocolate you need a bar with at least 70% cacao and that’s what I use for chocolate chips. I just take a 70% bar and cut it into strips and then the strips into chunks.

Dark Chocolate Chunks for BakingI’m also reducing sugar in my baking these days so these low carb cookies have less sugar and I don’t miss it at all. The texture of cookies made with almond flour is a little more chewy, but I really like it.

I’m planning to try more baking with almond flour and reducing carbs wherever I can so I’ll be posting anything I make that turns out. And these easy almond flour dark chocolate chunk cookies did turn out. Click here for the recipe. – Jenny Jones

Whole Wheat Chocolate Chip Cookies

Healthier Chocolate Chip CookiesI always look for a healthier way to make all the favorite things we like to eat and chocolate chip cookies are at the top of my “favorite things to eat” list. I posted my recipe some time ago but when I baked them today, I made a couple of small improvements. I reduced the oil and salt a little and I prefer them the new way. (the changes are noted in the recipe).

Anyone looking to bake with whole grains can make my version that uses part whole wheat & part all purpose flour. But these healthier cookies can also be made using only all purpose flour but honestly, there’s not much difference so I say go with the whole wheat version.

While most chocolate chip cookie recipes start out with a stick of butter, my recipe uses only three tablespoons of butter. I’m still not convinced we should be eating lots of butter as some people believe but when I use butter, I’m going with the grass-fed kind.

I always put nuts in these cookies and whether you use walnuts or pecans, I highly recommend toasting the nuts first. Toasting intensifies the flavor and it will add a lot to these delicious cookies, especially pecans. For chocolate chips, the darker the better for some health benefits.

Healthier Chocolate Chip Cookies

Healthier Chocolate Chip Cookies Recipe

These are the only chocolate chip cookies I make because they use less butter, less sugar, have more fiber and heart-healthy fats, and they are delicious! Most recipes call for a 1/2 cup of butter but mine… 3 tablespoons! Most recipes use all-purpose flour but mine… include whole wheat pastry flour. And guess what else? Olive oil! You don’t have to give up chocolate chip cookies when you can make them this much healthier. I’m using extra light olive oil in most of my baking these days. These cookies have lots of toasted nuts for extra protein and the darkest chocolate chips I can find.

At any given time there are cookies in my kitchen (and the freezer) and it’s what we mostly have for dessert. I love sweets but I also want to eat as healthy as I can so I am constantly looking for ways to make desserts healthier and this dark chocolate chip cookie is the perfect example. You don’t even have to mention that these are healthier, just serve them and watch everyone ask for more.
