“Hi Jenny. Hope you are keeping well, here in the UK it’s quarantine baking time! Luckily I have no shortage of yeast as I buy small tubs and keep them in the fridge, we’ve been making lots of no-knead but thought I would give your no-yeast a try. Buttermilk is not a staple here so I used the 1tbs vinegar topped up to a cup with milk. Also had to add extra flour as I often find our plain flour is less absorbent. Turned out great (as usual with a JCC recipe), here it is, still warm with a bit of Marmite. Thanks again for your time and passion in bringing us these fantastic recipes. ~ Paul.”

As a last resort, I called a Cake store where I buy pans and cupcake liners and they had it. After seeing three small packs on eBay for almost $50.00, I had no idea what to expect. When the store owner told me the yeast was in a one-pound bag, I was hoping it would not be astronomical. $3.69 later, I was on my way to the Italian store to buy corn meal. I made it to 77 with only the cooking skills to sometimes microwave oatmeal in the morning and burn an occasional hotdog or hamburger on a barbeque grill. Then the pandemic struck and awakened my irrepressible craving for daily fresh bread.
Rather than risk the remaining life I still cling to with dangerous forays to germ-laden supermarkets or bakeries, I searched YouTube to see if it was conceivable for someone with a complete lack of cooking skills to bake bread at home. Luckily yours was the first video I stumbled on — which shows that no amount of careful planning beats dumb luck.
Repeatedly I watched your no-knead bread-making video, chuckling each time at your cute remark about cleaning the writing off the baseball (as a good studio audience is supposed to do) and gained the courage to meticulously follow your technique. The result astonished me! I quickly and easily made the most delicious fresh artisan bread I’ve ever savored. Worthy of even the most pretentious boulangerie.
Now I have delicious fresh artisan bread every day. And you emboldened me to cook other things. I made your quick pizza. It’s better than my favorite pizza parlors (to say nothing of delivery pizza where you might get more sensual pleasure from eating the cardboard box it arrives in). Just so you know, I was raised in Nu Yawk City, so I really know good pizza.
With your online guidance I’m cooking and baking the foods I love, and love doing it. You’ve taught me how easy, fun and delicious It is to cook and bake. Candidly, I simply can’t believe that I can do this.

“Hi Jenny..again, yr no knead bread is a most wonderful & quick recipe that you have shared. In my latest baking, instead of using (hot) tap water, I substituted the saved (reheated) water from boiling potatoes. The starch from the potatoes added a “nice” flavour to the no knead bread & created a most delicious bread. I used my Kitchen Aid cast iron pot (fm CTC) but upped yr ingredients to 1 1/3 times eg 4 cups flour, 2 C potatoe water etc to fill my oval pot. Ciao fm Kitchener.”

“Hi Jenny, I made your chocolate zucchini cake recipe. I tweaked it, using half a cup of coconut flour in place of regular flour. I think my zucchini was a bit dry and added a couple of tablespoons of water. I think I might add 2 tablespoons of cream cheese to add a little more moisture to the mix. “I Think it’s the Aldi Yeast ?- Well, bummer.  I have tried Whole Foods to Fresh Market, Publix to Kroger, Sprouts to Walmart, Target, and beyond.  NO yeast to be found, but finally found some at Aldi. Alas, no Gelson’s here and I don’t know if this yeast is old because the date is funky plus it’s made in Turkey!  Oy vey. Anyhoo, this is the wheat bread rise after 45 minutes.  Bummer! What a waste. My only suggestion is to proof the yeast (google “how to proof yeast” and maybe it will be good and something else was the problem, possibly the liquid wasn’t warm enough. ~ What a beautiful pie, thank you! I reheat by putting foil inside the pan and pushing it up against the exposed  filling so the filling stays put,  and I leave the top crust exposed. Actually she made two, one with sugar and one with splenda and she noted that they, “seemed the same in texture and flavor.” Good to know. Thank you, Valerie.

“Hi Jenny.  I have made your Greek lemon chicken with potatoes and green beans a couple of times in the oven and love it. Today I decided to toss everything in the slow cooker instead and it turned out just as delicious, with the added bonus of a lemony broth!  I had some grape tomatoes I needed to use up so tossed them in the last half hour or so of cooking. I followed your recipe and let the chicken and potatoes marinate before tossing into the crock pot with the marinade, cooked it on high for an hour, then added the green beans for another 2 hours.  This could all be cooked on the low setting but for more hours of course.

PS The crow on the counter is in memory of my late father and grandfather.  Grandpa immigrated from Croatia in 1903 at the age of 26, then met and fell in love with my grandmother, who immigrated from Poland.  You can bet I will be making some of your Polish recipes; I miss her cooking. Finally, yesterday I was able to find it at a store in a larger city. I was elated! Today, I doubled the recipe and baked in a Pullman loaf pan. It came out beautiful and smells amazing. “Hi Ms Jones – Jenny – I found your YouTube page and blog just recently and was surprised to hear about your Polish background, despite having obviously known of your fame in other endeavors and TV. I am also of Polish immigrants. My Father was the cook (as yours). He cooked in the Army and my mother was so tired with 7 kids (me the youngest), she hated cooking and it tasted like it.

I am so glad I found your recipe site as I am also a Foodie and I teach nutrition (I believe in Food as Medicine) to my patients as a Registered Nurse case manager and health coach working for a wretched insurance company (but it’s my job whereas I also started in acting, theater and writing). I do believe that home cooking is a factor in health:  people who cook at home using fresh ingredients are 40% less likely to develop health issues.

My husband and I are embarking on growing our own mushrooms this year. (the new buzz ingredient for health — cauliflower now taking a back seat — LOL).  I do a lot of canning in the Fall depending on the crop we get from our small garden, and we utilize drying foods as well. I make pierogi every year for family (Christmas Wigilia)  and friends and we make a party out of it, plus on Easter, the beet-pickled eggs and Babka are traditional musts.

I usually don’t take photos of my disasters although Ive had many (NEVER put Pyrex on a hot burner, eg — a Rib roast disaster), but I thought I’d share at least this with you .  I tried to attach others but too big. Today, I made your 90 minute Wheat Bread recipe.  Ive been making my own breads now for about 3 years (the Dutch oven artisan bread recipe is a winner) and I like to also meld and merge other ethnic cooking into my craft (exploring Thai and Indian and Asian lately).  The easy rise time with your bread recipe helps when you “forget” to start your “starter” the night before.  I also like controlling my own ingredients when store-bought these days is poison.

I appreciate your stamina in your career and hope you are living a lovely happy life after so much hard work and dedication to your causes. I’m Always Learning

Jenny Can Cook Best RecipesThese are just some of the recipes that I have either improved or simplified since they were originally posted. I’m always learning and improving my skills so if anyone is using a recipe that was posted a while ago or if you printed it some time ago, please check the “Recipe Changes/Fixes” category in my blog.

So far I have made changes to about 100 recipes but many of the changes are minor, like increasing salt or reducing sugar but others, like my 15-Minute Veggie Pasta, now use an easier, faster, all-in-one-pan method. I’m always looking for ways to make something healthier or faster or to simplify the process so every time I cook, if I try a better way and it works, I adjust the recipe and share the exact changes I made in the blog.

I encourage all of my regular cooks to occasionally check the “Recipe Changes” category here in my blog to make sure you are using the newest and best version of each recipe. Christmas Snowball Cookies are So Easy To Make

Easy Christmas Snowball CookiesEveryone is making these easy Christmas cookies but it’s not even Thanksiving yet! What gives? I guess you’re all just testing them out to make sure they’ll turn out during the holidays. The only way to know for sure is to test out the recipe in advance and eat as many as you can because, you know, you can’t be too sure. I’m “testing them out” today and I can report that they did turn out really well. It’s just a public service I thought I should provide for everyone. 🙂 I can confirm that this is the easiest recipe ever for Christmas pecan balls, so easy that even amateur cooks are making them. “I didn’t know they were so easy to make,” they say.

And there’s more. These delicious little Christmas treats keep really well so you can make them in advance, and they freeze well too. It just keeps getting better. Homemade Pecan Pie Bars

Easy Pecan Pie BarsWhat can I say? This is not a dessert to have every day but for holiday baking, pecan pie is a must. But I prefer pecan pie bars because the bars can be cut into smaller pieces than a round pie and no one should eat big pieces of pecan pie! I always use an oil crust and my oil of choice is cold pressed avocado oil. I tried using maple syrup in the filling but did not like the result so I went with the traditional corn syrup, which, by the way, is not the same a high fructose corn syrup.

I only make pecan pie or pecan pie bars twice a year for Thanksgiving and Christmas and it’s a good thing because holiday recipes can be dangerous to have around. This recipe is really simple with just the basic ingredients so it comes together quickly. What I can’t figure out is why my pecans sometimes rise to the top and sometimes don’t, but these easy pecan pie bars are always so gooey and sweet and delicious.
