Quick & Easy Pumpkin Bars

Quick & Easy Pumpkin BarsTry to eat just one of these light and delicious bars! They seem to melt in your mouth. This is a quick recipe that uses less sugar than most and even less butter and cream cheese in the frosting. There’s only one ounce of cream cheese and one tablespoon of butter in the frosting.

I can never seem to get the top smooth but it doesn’t matter since they’re frosted anyway. Plus, you can always frost them upside down. My oil of choice for baking is avocado oil but they’re not all the same. Look for one that is light colored and flavorless. (see my brand under “Products I Use”). I line my pan with foil for easy cleanup and I frost these bars right in the pan.

Some days I crave pumpkin pie but don’t want to work that hard. These fragrant bars are the next best thing. (My husband calls them pumpkin brownies – sounds like a ploy for me to put in some chocolate chips ? – maybe next time.)  Click here for the recipe  – Jenny Jones

Fast Vegetable-Bean Chili

Fast Vegetable Bean ChiliHow many healthy vegetables can you add to a pot of chili? Six! Celery, carrots, bell peppers, zucchini, tomatoes, and fresh spinach. If you count the onions and garlic, you have eight! That’s a lot of vitamins right there. Vegetables are a lifeline to good health so this meatless chili is a good way to get a variety of veggies in one delicious meal. Then there are two kinds of beans for plenty of protein and fiber. Whip out a couple of my no knead crusty rolls and dig in!! ????

We don’t like spicy food and I cannot find a mild chili powder so I make my own mixture and it’s not spicy at all. My chili powder recipe uses paprika, cumin, oregano, garlic & onion powder, allspice, and cloves.

A couple of notes on this chili: This is a fast recipe so the veggies must be cut small so they cook through nice and soft. Cut them all in 1/4-inch pieces. To save time, prep only the onion, garlic, carrots, and celery to start. Prep the rest while the chili cooks. You may have to adjust the amount of chili powder to your taste. Quick & Easy Vanilla Cake

Easy Vanilla Wacky CakeBy popular demand, here is the vanilla version of my hugely popular quick & easy chocolate cake. As simple as the recipe is, it was not easy to get it right. I finally came up with a version that always turns out for me. I know it has a lot of sugar but every time I tried to use less, it did not turn out. With this “wacky” style cake, the sugar is needed for structure.

I also tried different pans, a square 8 x 8 pan and a round 8-inch pan, and was disappointed in both results. A 9-inch pan was the perfect size for a consistent cake. I suggest sticking with the recipe as written and you won’t be disappointed. It’s a light and delicious homemade cake that anyone can make, even amateur cooks. During the coronavirus quarantine, it’s good to have a dessert that does not use eggs, or even butter except for the frosting.

2 Minute Vanilla FrostingI’ve also just posted my new 2-minute vanilla frosting, made with just 2 tablespoons of butter, although this cake is really good with chocolate frosting too. I usually cool the cake in the pan and only frost the top.

If you plan to remove the cake to a platter, I suggest greasing the pan and lining the bottom with parchment paper. You can buy packages of parchment paper rounds or cut our own. “Thank you for your wonderful cooking videos!! Any chance you are considering releasing a new cookbook?  I really hope so!! There is nothing like a great cookbook to page through with a cup of tea ? I made a variation of your chicken pot pie last night for dinner and absolutely love your pastry recipe! I didn’t have chicken, so I substituted a 418g can of Salmon, and instead of carrots I added one leek (wish I had had fresh dill).
I put the pastry on the bottom, added the filling and topped the pie with potatoes (plain) that I mashed with some ground pepper and cooked for 40 mins at 400 degrees.  I covered the mashed potato (left the crust exposed) with a piece of foil I folded into a round shape for a portion of the cooking time than removed it.  Got the idea from your suggestion for protecting the pie crust in your pumpkin pie video.  In the last 5 minutes, I topped the potato crumble with a mixture that had a drop of olive oil, 2 tbsp of panko bread crumbs and 1/4-1/3 of a cup of grated parmesan cheese, and a sprinkle of cayenne pepper. It was delicious, your chicken pot pie sauce and pastry recipes are fantastic!!  And so versatile!!
My family can’t wait for me to make your chicken pot pie.   I plan to make it soon.  While we were eating, we came up with another variation of your pot pie dish.  When we have left overs from our next turkey dinner I will make your chicken pot pie sauce, (substitute the turkey for the chicken) put your pastry at the bottom and top the pie with the left over stuffing.
I made your Lemon Brownies on Easter weekend and they were delicious.  My daughter is a lemon lover, and this is a wonderful new dessert for our family to have.  Thank you!!  Next recipe – I plan to make your cabbage rolls.  I have two heads of cabbage in the fridge ready to be used.  I have never made cabbage rolls before, but after watching your video, I am no longer intimidated. It is always delicious and keeps well for several days in a plastic bag on my counter. Wonderful texture and flavour. I Made Apple Pie

Apple Pie Jenny Can CookIt’s just so good! I wanted something special for the holiday weekend and decided on my homemade apple pie. I bought six large Granny Smith apples and this time I cut the slices a little smaller, about 3/4-inch thick. Someone had mentioned that the apples weren’t cooked enough so slightly smaller pieces worked out just fine. And of course, I always use my easy oil crust, using avocado oil.

Most of the time I brush the crust with milk but I had whipping cream on hand and used that before sprinkling the top with sugar. I didn’t see much difference from using milk. You can’t buy an apple pie anywhere that even comes close to homemade. Serve an apple pie and you’ll find you have more friends & family than you realized! ? Click here for the recipe. – Jenny Jones

Better Blondies

Dark Chocolate Chunk Blondies

I’m always looking for easier ways to cook and bake and now my blondies are even easier to make, and a little healthier. I’ve been replacing chocolate chips with dark chocolate chunks in most of my baking because dark chocolate (70% cacao) has health benefits. I chop up some of a dark chocolate bar and they are now my chocolate chunks for baking. (I like Lindt 70% bars)

My blondies are now super easy to make, using only 3 tablespoons of butter, lots of dark chocolate chunks & toasted nuts, and you can even use some whole wheat pastry flour (if you can find it!)

CHAS MADE MY WHOLE WHEAT NO KNEAD BREAD

“This is a pic of your No-Knead bread recipe made with 2 cups whole wheat flour and 2 cups of all-purpose flour. I increased the yeast to a teaspoon. It’s excellent but the regular all white flour version is out of this world.  I do use a bit more salt (1.5teaspoons) and a whole teaspoon of yeast and I add maybe a tablespoon of olive oil to the dough initially. My mom, my sister, and her kids all make this bread now. Thanks so much for making your video, we’re all a bit fatter but we love it.

I shared your video on Facebook and several friends make it now too. My sister added sesame seeds after resting the dough ( she spritzed it first with water) and says that works great. I may try that next time. I have made it in a cast-iron Dutch oven which come out great, a heavy pot with glass lid, an enamel 4.5 Qt pot,  and I can tell you that the 1.5 Qt enamel pan I tried is just TOO SMALL. It came out looking like a cake, but still tastes good.  Thanks again! Your bread is awesome!”
