Soup for the week

Homemade Vegetable Soup

This is my vitamin pill. I made a big pot of vegetable soup for the week. I used my own chicken stock,  which I had frozen, and added a mountain of vegetables – a total of twelve, I think. The fresh vegetables I used were: carrot, potato, red pepper, zucchini, kale, spinach, napa cabbage, green beans, celery, and broccoli, and I also added frozen peas and corn. Do you see anything in there I missed? The soup is for the week but it will never last that long.

This morning I also made English muffins for breakfast and for dinner, my skinless chicken drumsticks. Oh, I also marinated some beets (my beet salad) for dinner but I’ve been snacking on them all day. My favorite thing to do is spend all day in the kitchen. …just sharing… – Jenny Jones

      I don’t really have a recipe for it but I can tell you I used the broth from my chicken soup (https://www.jennycancook.com/recipes/homemade-chicken-soup/). It had been refrigerated so I took all the fat off the top, heated it up and added all my vegetables gradually, starting with the hard ones like carrots/kale/green beans that take longer to cook. I ended with the broccoli and spinach that cooked in about a minute. The whole process took about 10 minutes. Then I tasted for salt. The next day I added some drained, canned cannellini beans and that was our supper.

    I love soups and this looks so healthy. I have to make this. Been looking for a really healthy, hearty soup and this seems to be the one I’ve been looking for. Thanks for sharing. One question,…I know some soups can be frozen to eat later. Can this soup be frozen and if so how long will it keep?…

      I don’t think frozen vegetable soup will ever be as good as fresh because the vegetables will lose some of their body when frozen. But you can freeze the soup for up to 2-3 months.

        Thank you. Never added leafy greens to a soup like spinach and was wondering. I have added cabbage but wasn’t enough to save and freeze. I don’t like for food to go waste. I will just have to share with what’s left after I’ve had my share IF there’s any left to share
