Oatmeal Pancakes

These light and fluffy pancakes just happen to be good for you. Made with oats and whole wheat flour, they are 100% whole grain with lots of fiber. Cook on a non-stick griddle and no butter is needed. - Jenny Jones

Makes: 6 to 8 pancakes

Oatmeal Pancakes

Ingredients:

  • 1 cup rolled oats (regular or quick oats)
  • 1/2 cup whole wheat pastry flour
  • 1 Tablespoon sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt

  • 1 cup reduced fat buttermilk
  • 1 egg
  • 2 Tablespoons vegetable oil

Instructions:

  1. Combine dry ingredients in a bowl.
  2. Combine the buttermilk, egg, and oil in a measuring cup.
  3. Preheat a non-stick griddle to 375° or preheat a large nonstick skillet to medium-high.
  4. Add the buttermilk mixture to the oat mixture, stirring until just moistened. Do not beat or over-mix.
  5. Pour about 1/4 cup of batter per pancake onto the hot griddle and cook for about 3 minutes per side.

No buttermilk? No whole wheat pastry flour? See Substitutions in my blog.

    I don’t use sugar, used agave & a drop of black strap molasses. Get oats at bulk store. They are very coarse. Had non-fat milk that had soured. Think I will let mixture sit for 10-15 minutes next time & there will be a next time. They were very filling. Served with wild blueberries & pure maple syrup. Keep up the great work!

    Delicious and love Jenny! Healthier version than my recipe that I’ve used in the past and better. Added 1/2 tsp of vanilla which added a notch of extra flavor. Your recipes are so much fun and easy to make. Thanks!

    never saw her show, but the Lady can cook! I have tried several of her dishes, first her worlds best meatloaf, it was. because of a medical issue, I can no longer consume the amounts of sodium I once did. I cook everything more or less from scratch – Jennies covers a lot of itches. good food that does not depend on salt sugar or fats to be good and eating and healthy, will be making pancakes in the morning.

      The pancakes will be more dry and more dense made with regular whole wheat flour.

    Thank you Jenny for a healthy reciepe I add plain yougurt and halved the flour with buckwheat flour I. Learned halving things from you in another vedeo and we like and blessed to get free black berries I add to the batter a few or blue berries and serve w real maple syrup PS I use coconut oil instead of. Canola because I found from my grocery store. It is GMO.not healthy. For us thanks a bunch for saving us time. And money may God bless you richly
