Crispy Top Oatmeal Bars

I use a 70% dark chocolate bar and chop it into small chunks but you can use dark chocolate chips. When broiling DON'T WALK AWAY! A few too many seconds and the top can burn.

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Makes: 12 - 16 bars

Crispy Top Oatmeal Bars

Ingredients:

  • 1 1/4 cups rolled oats
  • 3/4 cup flour (all purpose or whole wheat pastry flour)
  • 1/2 cup brown sugar
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

  • 1/2 cup vegetable oil (I use avocado oil)
  • 2 eggs
  • 1 1/2 teaspoons vanilla
  • 1/3 cup dark chocolate bar chunks (or chocolate chips)
  • Topping:
  • 1/2 cup finely diced pecans
  • 1/2 cup sweetened flaked coconut (1 ounce)
  • 2 Tablespoons brown sugar
  • 2 Tablespoons vegetable oil (or melted butter)

Instructions:

  1. Preheat oven to 350° F.
  2. Grease or line an 8 x 8 or a 9 x 9-inch square pan with foil or parchment paper.
  3. Combine dry ingredients in a bowl.
  4. Add oil, eggs & vanilla, stirring by hand until almost combined.
  5. Fold in chocolate chunks and spread evenly into pan.
  6. Bake for 15 minutes or until a toothpick inserted in the center comes out clean.
  7. Remove from oven and set oven to broil. Leave the oven rack in the middle.
  8. Topping:
  9. In a small bowl, combine ingredients using your fingers.
  10. Cover warm cake with topping, pressing down firmly, and broil for 1-2 minutes until browned. Check it often and rotate because it can easily burn!

    Hi Jenny! I was wondering when you will be posting some new videos? I grew up watching you and the talk show. I really miss seeing your bright smile and great attitude! Any chance you might do a Food Network show? BTW I will be making these breakfast bars! Love chocolate and coconut. I also have a need for sweets immediately after a meal! Thanks for posting- Damien
