Beet Salad

Ingredients:
- 3 beets (tennis ball size)
- 1/4 cup sliced red onion
- 1 Tablespoon olive oil
- 1 Tablespoon balsamic vinegar
- 2 Tablespoons fresh orange juice
- 1/2 teaspoon sugar
- 1/8 teaspoon salt + pepper to taste

Dressing:
Instructions:
- Peel and cut beets into bite size pieces.
- Steam or boil them until done, around 15 minutes.
- While beets cook, combine dressing ingredients and set aside.
- Place cooked beets into a glass bowl. (plastic will retain the red dye).
- Stir in onions and dressing. Serve warm or cold.

Jenny have you used the yellow beet sometimes to mix in with the red. I think the yellow beet has less flavor than red, but may look pretty here. The flavor might be diminished though. Just a thought.

What a great tasting super healthy beet salad, yummy ! I also really love boiled, sliced beets tossed in a bit of sour cream . I must have got the idea to do this because I always put a dollop of sour cream in my bowel of borscht . Thanks for sharing !
