I Love This Lemon Blueberry Loaf!

Lemon Blueberry Loaf Recipe

I found some beautiful organic blueberries yesterday and I put the whole box into this gorgeous loaf! 🫐 Has anybody noticed that blueberries aren’t really blue? They’re kind of purple. Whatever color they are, I love this loaf so much, not just for the lightly sweet taste, but for the health benefits of the berries. The deep hues are what fills blueberries with so many nutrients. Don’t just take it from me. WebMD says:

“Packed with antioxidants, blueberries are also high in potassium and vitamin C. Not only can they lower your risk of heart disease and cancer, they are also anti-inflammatory.     Well, I will start with your whole wheat. I looked for an oatmeal bread but don’t see one. That is my favorite memory from my youth and a sister in law who made it. It was so filling and tasted so nutritious.

    So happy to see you active on your blog! I grew up watching your talk show and was so happy when I stumbled onto your YouTube channel 💕. I’ve made the No-Kneed Bread, Rolls, & the Beef Stew! I messed up on the bread with my propane running out so we’re gonna make bread crumbs with it. The stew was absolutely incredible. Felt instantly like I was at my grandmothers house relaxing with my cousins. I’ve been going through a pretty rough few years and been in bed dealing with some health issues for the past 6 months. No motivation. When you popped up I got excited to bake & cook again for my family. They are so happy to see some of that light back! Btw saw the Danny Bonneduce? Thumbnail and even years later I wanna boo him in the nose! You handled it so gracefully & it was incredible seeing how it played out, your example helped me to rethink a similar situation I’ve had to deal with.

    I just made this recipe today only in muffins. This is one of our favorite loaf recipes. Very easy and forgiving because I forgot the sugar. Always taste a little before you pour into baking vessels. Haha. I’m glad I did. Had to gingerly fold the sugar in at the end. They still turned out delicious even tho they were quite blue.🤷

    Thank you for this! I had a half of a bag of frozen berries to use up in the freezer and this fit the bill. As mentioned by others the lightness of the sugar was great so the tartness of the berry mix came through! Loved it! Appreciate your recipes, Jenny.
