“Dear Jenny, I’m a 75 year old recently retired hotel/restaurant owner. I learned about cooking from my Great Aunt. My Great aunt and Uncle had no kids and their house was my favorite place to go, on weekends, from the time that I was 5 years old. Twice a month, my Uncle Frank would pick me up on Saturday morning and drop me home on Sunday afternoon. My Auntie Moe, was the Christmas cook in the family. They lived in a house they built around the turn of the century and it had a real root cellar in the basement and a storeroom that was bulging with home made jams and preserves and my Uncle even made his own Rootbeer! It was heaven for me. Every time I went over, she would ask what we should make, pies, bread, rolls, cakes, meat loaf, roast chicken, and I’d go over the day before a holiday and I would get to help with the roast turkey and cranberry sauce and dinner rolls and always old fashioned Mac and cheese, made in layers and baked in the oven. One of my favorite things to ask for, was her fabulous cinnamon rolls! The pain in the butt old fashioned way!
When I saw your recipe, while I was trying your whole wheat bread, reminded me of hers. I tried your easy recipe, but since I too am a pro. cook, I had to screw with it, of course. I added a tsp. of vanilla powder, and substituted melted butter, which I added to the heated milk. I got a kick out of your instruction to cut off 1/2 inch from both ends of the roll before threading the rolls into eight pieces, (do you square your potatoes when you make French fries too)? I laughed! I always just make the end pieces a little bigger and smootch them into the pan, with the odd side down. Auntie Moe always baked hers in muffin tins with a pat of butter and a spoonful of brown sugar and cinnamon in the bottom of each one.
I’d never made cinnamon rolls any other way, so I decided to try your 8 to a 8” pan system. I couldn’t resist, however, putting a small pond of butter with a bunch of brown sugar and cinnamon in the bottom of the pans, I made a double recipe. This is what happened. They raised so much that they fought for space in the pan and raised way over the top. Great recipe, but no frosting for me, 5 minutes out of the oven, I flipped them over, upside down, onto plates. Gotta have that butter, brown sugar, cinnamon soaked gooey rolls. I never write in to cooks on the internet, but I loved your sense of humor and helpful hints, so I couldn’t resist. ~ Candy”

I am amazed at this simple No-Knead Bread recipe. Last night I mixed up the recipe only bumping the yeast to scant 1 teaspoon and using cool water for overnight 10 hour rest. This took all of 5 minutes to do. Before daylight I started my hot oven and using my Grandmother’s 100-year-old cast iron Dutch Oven I made this incredible loaf of bread. The sun is up, house smells great, and the bread is done and it is so good! I am very pleased with the taste and texture. Simply amazing! Mark from Deep East Texas.”

“Hi Jenny. My name is Andrea. I came across your YouTube video about the no knead bread because my grandson, Andrew, who is in 7th grade had to bake bread for CCA, or home Ec, as we know it. He asked me to help him make a recipe I have for an Amish white bread but it’s a bit complicated, So I was looking for an easy recipe to help him with. We did yours and it was really good. They didn’t get dark because the oven went out but they were cooked through. I thought to myself, this is a great base recipe. Andrew wanted me to make the honey bread that he likes so I added a little honey before I put my hot water in and it worked. I used my air fryer oven since my oven went out right after making his bread. Again it worked. Next time I make bread I’m going to use a larger pan but in the air fryer oven. this is Andrew first time bread baker.“

I would like to confess to you that from all your recipes that I’ve done till now your Easy healthier chocolate cupcakes I’ve made at least 20 times. In my opinion it’s a quite forgiving recipe because I successfully add each time in it different other ingredients such as orange extract or chocolate ganache and they are still so tasty.
In order to frost my cupcakes I used your chocolate frosting recipe with sourcream (in my first pic), 2-minute chocolate frosting (in the second pic), but also your 2-minute vanilla frosting (in my third pic) in which I also add some colour. I like also to add to frosting different berries which I pick up with my family from our forest.

And you are correct, it’s wonderful eaten while still warm! The changes I made were just two small things. First, my hubby loves chocolate ‘chunks’ more than chocolate chips. So that’s a super simple switch for me. The second thing I did was that I used my 8″ springform pan. It was easier for me so I wouldn’t mess up that delicious streusel. “I decided to risk making the Faster No-Knead Bread in my Romertopf clay baker. Did some research and put the cold lid and clay bottom into the cold oven, unsoaked, while the shaped dough was rising for an hour. The dough was then shaped, then was ‘resting’ for 15 minutes covered with a towel, sitting on parchment paper on my countertop while the oven heated to 450 F. My oven takes only 15 minutes to reach 450F. After 16 or 17 minutes I took the clay baker out of the oven, then lifted the dough with the parchment paper into the baker, popped on the lid and placed it into the oven for 30 minutes. I then removed the lid and the paper and returned it to the hot oven to brown it, for 12 minutes, following Jenny’s instructions. Superb. ! Nancy, Vancouver.”

It turned out perfect twice. And yesterday I happened to be out of eggs so I made your honey wheat bread and it came out amazing. I didnt tent the top with foil but I don’t mind a browner, crustier top. Also I used whole milk and that didn’t cause any problems with the rise or anything. DALILA MADE MY QUICK & EASY VANILLA CAKE
“Hi Ms. Jenny I had a taste for sweets…..when don’t I! I made your QUICK & EASY VANILLA CAKE recipe and I used your recipe for MILD CREAM CHEESE FROSTING, a wonderful combination if you ask me. One change I made was to experiment with the cake pan size. That’s the only change I made, just to see if it’ll work for me. I use three of my 6” X 2” cake pans instead of one 9” cake pan. It worked perfectly for me, I just made sure the batter was evenly distributed in the pans. For me that was about 11oz. per pan, give or take a smidgen. I made sure I lined my pans with parchment paper for easy removal. Bake for about 18-22 minutes and then start checking it. They came out great, no problems whatsoever. I wrapped and froze one cake layer for another time. I doubled your frosting recipe in order to frost this cake. I assembled the other two cakes and added a sugar-free apricot filling. This cake recipe is very good!!! I will definitely be making this recipe again. BTW…..please excuse my decorating, I was rushing because hubby couldn’t wait to eat it. Happy baking! Dalila.”

I used my toaster oven as it was a hot day to be baking in the oven. FYI… I had substituted some ingredients with light tasting olive oil, coconut brown sugar & just added a little lemon juice with the almond milk. I followed the recommended half all purpose flour- half white whole wheat flour. I used a metal cake pan as you can see and baked it in the toaster oven. Usually, with some recipes, I had to watch out during half of the total baking time and some would be done. This one was baked for what temperature & total time you mentioned and came out perfect! I don’t agree with any racial divide. I could only agree with dividing this delicious coffee cake! So, pardon me for the missing pieces before I took the photo. They were already eaten long time ago with hibiscus tea & our favorite coffee! Thank you so much and may God bless you.”

“Hi Jenny, tonight I made a leftover Turkey Dinner Pie using your amazing Chicken Pot Pie recipe. I added leeks & rosemary to the filling, and put the pastry on the bottom. For the topping I used the left over stuffing and used the last of the pastry to make little cut outs for the top of the pie. We served it with a root mash (Celeriac and Sweet Potatoes boiled then mashed), and the pie was delicious! Highly recommend this pie as an idea to use up Turkey leftovers. I used grapeseed oil for the pastry, and prefer it to the olive oil I used the last time. I absolutely love your pastry recipe, and plan to use it to make empanadas. We have wanted to make home made empanadas for years, but so many recipes call for lard, or shortening. Now we have a great pastry recipe to use, and can’t wait to try making them. Thank you for sharing such wonderful recipes! I do hope that you publish another cookbook. ~ Catherine, Toronto, ON.”
