I love my vegetable pasta!
I got a late start thinking about dinner and decided to make my vegetable pasta. As simple, easy recipes go, this is the best, and one of the healthiest. As long as you have some fresh vegetables in the fridge, you can put this together in 20 minutes. Tonight, I made it with broccoli, asparagus, kale, spinach, and bowties. My Beef Stew Recipe
If you’re looking for an old fashioned beef stew recipe, you will love this one. The meat is so tender you can cut it with a fork and the potatoes and carrots are full of flavor. It’s a pretty easy beef stew recipe. I dredge the meat in seasoned flour, brown it in olive oil, then it cooks in beef stock for an hour and a half. Long cooking is what makes the meat so tender and using beef stock instead of water makes a delicious beef stew.
I make my own beef stock and keep it in the freezer to use for this delicious dinner recipe and by the way, beef stew tastes even better the second day. My marinated pork tenderloin dinner
Show some love to the pork tenderloin! It’s one of the leanest (and cheapest) meats around and it cooks really quickly. It’s always tender as long as you don’t overcook it, so a meat thermometer is very useful here. My marinated pork tenderloin comes out so tender and flavorful and this easy recipe takes very little work. Everything cooks in the oven at the same time… in 30 minutes! I made pizza last night for the Super Bowl – Denis likes mushrooms and I like plain so… half & half. And we both like a crispy crust, one that crackles when you slice the pie. My favorite crust comes from using a pizza stone and wooden peel but you can also get a great crispy crust with one of those special pizza pans with holes. Make the best nachos ever for Superbowl
Do you spend Superbowl Sundays on the couch eating unhealthy snacks, watching guys in better shape than you play football? Is your fridge the only place you’ll ever see a 6-pack? Then try what I think are the best healthiest nachos ever.
They are low fat and I use so many healthy ingredients, you can have these nachos for dinner. They take a little work but you won’t feel like an over-stuffed football by the second half… you won’t need a time out to take a nap… your waist band won’t snap from too many chicken wings… the sofa springs won’t be audible every time you sit down… you won’t need double coverage to hide your stomach… your stomach won’t hurt from having one turnover too many… your friends won’t be scrambling to get your heart started again… your trip to the bathroom won’t be third-and-long… I think I will cut back on these really bad jokes… but make sure you roll out my nachos… they are the bomb. – Jenny Jones

Salmon Patties
For quick healthy meals, I always keep canned salmon on hand for these delicious patties. I make them with red pepper, parsley, onion, soft whole wheat breadcrumbs and egg, browned in olive oil with a side of steamed vegetables.
Salmon is one of the best sources of omega-3 fatty acids that protect the heart so I eat a lot of salmon sandwiches, too. I think it’s a Canadian thing… Click here for the recipe.
One of my best recipes
I love Chinese food but everything I like is batter fried! So I finally mastered my own recipe for Orange Sesame Chicken that is healthy, crazy good, and it cooks in less than ten minutes! You’ll need a couple of not-so-common ingredients like toasted sesame oil but this dish is so worth it. If you can’t find the toasted sesame oil or toasted sesame seeds, try the Asian section of your market, Whole Foods or Trader Joe’s. Independence Day
I celebrated Independence Day by making my fall-of-the-bone baby back ribs. There’s enough for leftovers tomorrow! I also made potato salad, cole slaw, fresh corn, homemade bread, and we had fudge bars for dessert. I found some by “Skinny Cow” and they were low fat and really good. The meaning of the day was not lost, though. I remembered today, as I do every day, how lucky we are to live in this country and we should never take our freedoms for granted. I am grateful for many things, every day.
