PAUL MADE MY MEATLOAF “Hi Jenny. This was the 3rd time with your meatloaf recipe – my family love it, even though meatloaf is not really a regular dish in the UK. I make it with Turkey mince that is around 3% fat, it’s a bit softer than beef so I add a spoon of flour last just to help it bind together – tastes great, love the crispy outside. Not such a great photo, will do better next time! Thanks again for your fantastic work on this site.”

CHET IS SHARING HOW HE RISES DOUGH “Hi Jenny, I am using a turkey cooker to rise my dough. I have found that this method works well as the ambient house temperature during winter days fluctuates. There are two vent holes in the cover of the cooker, I have enlarged one of the vent notes to allow a thermometer to be placed to monitor the temperature. I have found this method gives me the best and consistent results.”

DALILA MADE MY APPLE PIE “Hi Jenny! ? I have to tell you that your Homemade Apple Pie recipe is a keeper! I made Apple Hand Pies and they came out very good! The one small change that I made was to the granny smith apples. I diced them into smaller pieces so they’ll fit in the hand pies. I made your homemade BBQ sauce, your homemade dry rub and followed your instructions for your oven-baked ribs…..AWESOME!!! All three of your recipes that I made were easy to follow. The one small change that I made was that I used boneless-pork ribs. I didn’t have any bone-in pork ribs so I substituted those for what I did have in my frig. The ribs were soooo moist, tender and flavorful. I served our ribs with a side of pineapple coleslaw and rolls. Talk about an appetizing dinner that not only looks great, it also made my taste buds dance with joy!! Thank you for sharing your cooking ideas! Happy Cooking! ? ~ Dalila.”

I have discovered your recipes few months ago and I cannot explain how happy I am. As a Czech, I love my bread, bread rolls, poppy seed rolls etc. everything that is impossible to find here. Thanks to you, I can bake everything now and with the great taste I remember even from my childhood. Thank you! I am slowly trying to go through all of your recipes, but of course bread and bread rolls were the first I had to bake. I am sending the pictures of them. And then was this white bread, and because I have here „czech“ size of the baking pan, the bread is longer and slimer, but we don´t care, the taste is great. DALILA MADE MY TURKEY CHILI & BRAN MUFFINS “Hi Jenny! I made you Easy Turkey Chili, key word….EASY…., this recipe was put together in no time at all. I did make a small addition, I added some black beans to my pot of chili. The added bonus of black beans, besides the fact that they are tasty, they are full of protein, fiber and antioxidants. This chili was a fabulous dinner one night and makes a nice lunch for another day. Thank you for another wonderful, healthy and tasty recipe! Happy cooking!?”

Here’s a picture from before I cut them into pieces. I named them “Lemon Delights” because, well… they are delicious!! DALILA MADE MY CHICKEN MEATBALLS “Hi Jenny, I made your Chicken Meatballs with your Red Sauce recipes. I serve it over some cheesy, creamy polenta for dinner, talk about wickedly delicious!! I found both recipes easy to follow, no hassles or mess-ups at all. I cooked the chicken meatballs in the sauce on a low simmer and they came out tasty, moist and tender. The seasonings were spot-on, no too heavy, not too light, just right. The savory aroma coming from our kitchen as dinner was cooking was wonderful! We couldn’t wait to dig in….LOL!! I topped my muffins with a bit of turbinado cane sugar before baking them. They’re great with my hot coffee in the morning or for an afternoon ‘grab & go’ snack. Happy baking!”

LENORA MADE MY FASTER NO KNEAD BREAD “Hi Jen, I left a comment under Lenora Collins on your YouTube channel for the Faster No Knead Easy Bread. Honestly, I only had two cups of sad bread flour crumpled up in the original packaging just hanging around from a few months ago. I kind of had to guesstimate the other ingredients based on your recipe since I was using one cup less flour. You can read in my YouTube comment that I had absolutely no confidence or real idea what I was doing. I just tried to follow the recipe as close as possible. I think my mess ended up being so successful because I used your methodology and tools. Oh, except I didn’t have parchment paper, but there was no way I could’ve just plopped the dough on the surface of the 450 degree preheated Dutch oven, so I placed it on a square of aluminum foil placed at the bottom of the Dutch oven. Enclosed you can see how my “mess” turned out. No lie – I was impressed with myself. Thank you for all of your efforts in testing these recipes so they turn out AMAZING every time. DAVE MADE MY FASTER NO KNEAD BREAD “Hi Jenny – thank you for the great recipe and video! I absolutely love cooking, but artisan bread seemed so complicated. I have recently decided to make a sourdough starter but didn’t want to wait for it to be ready, so I gave your recipe a try. I followed your instructions and all was well. The dough was definitely “looser” than I am used to working with, but I used my scraper and it was fine. Check out my first loaf (good thing I took a quick picture, because it didn’t last long!). Look at that wonderful crumb! And the crust… oh. my. goodness. It was easy and fun, and I will be making this regularly (I hear someone cutting another piece of as I write this!). So today I thought I’d try the No Knead Crusty Rolls too. But I really liked how the bread came out of my Dutch Oven so I stuffed them in there. ? I found a pie pan that was the same size as the Dutch Oven to let the dough rise in while the Dutch Oven heated in my oven (just so it would fit). I also brushed them with Butter as you can see. I was planning to show the before and after pics but…..they were so pretty and good they got eaten before I remembered to take the after pic. This bread has olives and capers (I have too much capers in my fridge). I often give this bread away as a gift, wrapped in wax paper and a string ribbon tied around it, then placed in a zip-lock bag. Practical, edible, delicious gift appreciated by family and friends who received it. On Thanksgiving, i woke up early to bake this bread in my relatives’ home. I wanted to do something nice for them as a guest. My relatives were so excited about the bread. We sat around the table and ate the bread together, dipped in olive oil or butter on bread. Bread was gone in no time including the crumbs. Spending time together this way was so meaningful and memorable – THANK YOU SO MUCH, JENNY!”

I make your recipe today, hoping to freeze them for Our Thanksgiving dinner this weekend.I used a light coloured air sheet with parchment paper and baked them on the middle rack at 450, as my oven thermometer said, for 28 minutes. They tasted good but not quite done and didn’t brown like your photo. I can’t figure out why. I have been baking for 39 years. I definitely want to get these right as I feel this recipe is going to be a keeper. Any suggestions? Thanks and hope you and your family have a great Thanksgiving.”
*Two things come to mind. One, your oven may not have been hot enough but if you used a free-standing oven thermometer, the kind that rests on the rack, then that may not be the problem. It takes my oven about 1/2 hour to reach 450 so that’s why I suggest 35 minutes to preheat. I think it’s more likely the air sheet. I tried one only once for some cookies and never used it again. They are made to prevent burning but they also prevent browning. If you have a standard silver colored baking sheet I suggest you try that and please let me know your results. – jenny

ARLA MADE MY FALL-OFF-THE-BONE RIBS “Your rib recipe is exactly as advertised! They are fall off the bone delicious. I rubbed the ribs and spiced them. They relaxed and rested after their spice massage in a cool refrigerator overnight. These were grilled on a gas grill at 300 degrees F, then given a saucing and heated about 20 minutes longer. They were moist, tender and bone sucking great. One rib my husband picked up actually had the meat rolling off of it, they were that tender.
This is my first experience with you and your recipes. I’m not a TV watcher and must have been too busy working to know you are a big celebrity! My first intro to you was the rib youtube video. There I found a charming, playful host with an immaculate, cheerful, colorful kitchen, hygienic discipline and lots of good ideas, with an obvious knowledge of food. My husband wanted to grill ribs. We never had before, it seemed too intimidating. We were confused that our favorite BBQ place had tough ribs one time and tender another time. They became so inconsistent we decided to put on our aprons and take matters into our own BBQ mitts. I love cooking, heck I’ve been doing it for over 40 years, so your you tube seemed just right to my style.

“Today I baked the “no knead bread”. I have no dutch oven, so I baked it in a bread tin and covered it the first 20 minutes. Then I removed the cover, baked it another 15 minute. And at least I took it out of tin and baked it for 10 minutes to brown it. It looks so yummie and it is very crunchy. For dinner I will cut it. Thanks for this nice recipe. – Sabine”
