“made the simple white bread with egg today. So excited how it turned out. The recipe I have to say is forgiving. I already posted the whole wheat simple bread with egg photo . I forgot to mention I used honey instead of sugar and if still produced a fabulous bread. This simple white loaf I have to admit I know I overthought my kneading and kneaded way over 50 and then was not happy with my tuck and redid it three times. I thought for sure I ruined the dough. No way did it get ruined but I do think deciding not to add honey udung the sugar instead with my red star quick rise yeast and making sure my milk was 120-130 degrees gave me a quicker rise. Not 35 but 60 minutes to make 1” above rim of pan. The wheat bread using honey and not checking the temp with gauge took 75 minutes.The end result either way turned out both white and wheat a fabulous crust and easy to slice. Tender moist inside . And absolutely delicious. Thanks again Jenny another go to bread . “

“Hi Jenny! Thank you Thank you Thank you!! Finding this website yesterday and making these this morning has been such a huge help to my mental health. I know that must sound absolutely crazy but since I have moved from the moun of the northeast and using a gas stove and oven to the coast of the southeast and using super fancy electric ovens not one single thing that I have baked has come out well in 11 years. I was beginning to think that what happened before we moved was just a fluke and that I really couldn’t cook. My family has been patient with me, bravely trying all my failures and gamely giving me polite advice about what I maybe could have done differently. But today we all stared in amazement at the dough when it began to rise! Which was my first triumph of the day (no dough has risen yet in this house, in 6 years, no kidding), then when I baked the rolls as directed by the recipe and they came out exactly golden brown and still moist!

“I managed to get this perfected after several disastrous attempts. The recipe is absolutely spot on, but my oven was old when the world was young, so I had to compensate by tweaking the temperature and times until it came out just right. I have to pre heat for 45 minutes and bake for 45 minutes, but at the end of the day it produces a fantastic artisan loaf so I can’t complain!”

I used my long flat rye bread pan and I brush it with cream and sprinkle the top with sparkling sugar and it is as close as I have ever come to replicating that recipe. “Dear Jenny, I used your recipe first and made a great Braided Cinnamon Raisin bread, it was a great success and everyone loved it. Yesterday I decided to make another loaf and make it bigger and modify your recipe. I added, pecan and 3 table spoon of saffron water, one egg, both red and golden raisins in addition to your original ingredient of course. After an hour proofing it, the size doubled, I cut the dough which was the size of Mount Everest in three pieces and round them in circle, put the cinnamon/brown sugar mixture on top of each circle and then I placed the circle on top of each other and made a big mound. I then used egg yoke to shine it (per your recipe). I placed the dough in cast iron pot (Lodge) with cover on for 25 minutes and another extra 10 minutes, then took top off and left it another 10 minute. Wow, the result was fantastic, the most delicious bread ever, the crust was fantastic and inside was even better. I was worried that I shouldn’t have covered it in avon, but it turn to be a great success and super delicious. Please see the photo, that explains it all. Thank you very much for your friendly and great recipe.”
