NURIA MADE MY DARK CHOCOLATE FUDGE BROWNIES “I just stumbled on your blog while looking for butter-free brownies. I read the recipe here and was hmmm IDK but the video on YT was most convincing! Anyhoo, I made two substitutions to the recipe:1) I used coconut oil instead of regular oil bc I find it never leaves oily taste in baked goods and 2) I used gluten-free flour*, same amount as all-purpose. They came out great! So chocolatey and fudgey! *(I use a mix of 3 parts rice flour, 3 parts manioc starch, 4 parts corn starch, and for baking I add 1/2 tsp xantan gum per flour cup) Also, I used the same paper on which I sifted the dry ingredients to line the baking pan! (mine is about 15×25 cm – ~6×10”) Will be checking for more recipes! Thanks!”

OLD BOB MADE MY PAN PIZZA IN HIS CONVERTED WEBER PIZZA OVEN “I have 22″ Weber kettle BBQ that I converted to a pizza oven. It works great for the standard pizza dough cooked on a stone. Using indirect heat with wood, the chamber reaches over 700 degrees.I decided to try it with your Pan Pizza recipe using the cast iron skillets, which is my favorite pizza for my regular oven. For a group I prepared four batches of dough. I prepared 4 cast iron skillets with oil and the dough. At cooking time, I prepared one pan at a time per the recipe. After the 3 min stove top warming, I placed each pizza in the Weber, One by one, they turned out great. The only change from your recipe was adding several more minutes to the baking time and I had to rotate the pan as it baked.”

I used shredded zucchini instead of the canned pumpkin. Seeing that I didn’t use canned pumpkin I omitted the nutmeg and added vanilla extract. I ran out of my whole grain pastry flour so I used all purpose flour only. Added some sugar for sweetness, sorry, couldn’t help myself, I do love my sweets! CAROL MADE MY PUMPKIN PIE “Dear Jenny, I thought you would get a kick out of my pumpkin pie adventure. I followed your video exactly until it came time to find the right sized pan. I could only find a too big pan, as you can see. Did fine putting the filling together, then while putting the dough together mistakenly used water instead of the oil!!! Hey, I’m old (76) but I do try. So, never to throw away something like this, just added some olive oil, thinking Jenny said “lite” and I only have regular. That made it lite, right!!! *O) Rolling it out was quite the adventure as it truly stuck to the wax paper. Just added a little flour here and there and got it off and into the pan/bowl. The dough was way up on the edge of the pie bowl so I just rolled the pie dough down the inside of the pie bowl like an old pair of stockings, thinking this will NEVER WORK. It did stay up, I guess from the weight of the filling. Have not tasted it yet but the pumpkin pie aroma is heavenly! It’s still hot and I wanted to tell you this story before dementia sets all the way in! Worse comes to worse I have pumpkin pie pudding and I’ll go out tomorrow or on the internet and find a proper, larger pie pan! THANKS JENNY and keep up the good work.”

I was able to split the recipe into two separate 5X7 casserole dishes. One for eating now and froze the other one for another day. When I’m having a busy day I just reach in my freezer and I’m all set for dinner. The small change I made was that I added part-skim mozzarella. I didn’t have any reduced- fat cheddar cheese on hand. CHET IS SHARING HOW HE RISES DOUGH “Hi Jenny, I am using a turkey cooker to rise my dough. I have found that this method works well as the ambient house temperature during winter days fluctuates. There are two vent holes in the cover of the cooker, I have enlarged one of the vent notes to allow a thermometer to be placed to monitor the temperature. I did make a small addition, I added some black beans to my pot of chili. The added bonus of black beans, besides the fact that they are tasty, they are full of protein, fiber and antioxidants. LENORA MADE MY FASTER NO KNEAD BREAD “Hi Jen, I left a comment under Lenora Collins on your YouTube channel for the Faster No Knead Easy Bread. Honestly, I only had two cups of sad bread flour crumpled up in the original packaging just hanging around from a few months ago. I kind of had to guesstimate the other ingredients based on your recipe since I was using one cup less flour. You can read in my YouTube comment that I had absolutely no confidence or real idea what I was doing. I just tried to follow the recipe as close as possible. I think my mess ended up being so successful because I used your methodology and tools. Oh, except I didn’t have parchment paper, but there was no way I could’ve just plopped the dough on the surface of the 450 degree preheated Dutch oven, so I placed it on a square of aluminum foil placed at the bottom of the Dutch oven. Enclosed you can see how my “mess” turned out. No lie – I was impressed with myself. Thank you for all of your efforts in testing these recipes so they turn out AMAZING every time. I have recently decided to make a sourdough starter but didn’t want to wait for it to be ready, so I gave your recipe a try. I followed your instructions and all was well. The dough was definitely “looser” than I am used to working with, but I used my scraper and it was fine. Check out my first loaf (good thing I took a quick picture, because it didn’t last long!). Look at that wonderful crumb! And the crust… oh. my. goodness. It was easy and fun, and I will be making this regularly (I hear someone cutting another piece of as I write this!).
