Hash Browns
When hash browns are just right, there’s nothing better with breakfast… crisp and golden on the outside (especially those crunchy edges!) and moist and tender on the inside… that’s how perfect hash browns from scratch should be. And you can do this! This may be my only recipe with just ONE ingredient so you know it can’t be hard. There are just a couple of things that can make hash browns foolproof every time. You’ll see…

Making a video at home
It’s always fun to make cooking videos at home and today was the day. We turn the kitchen into a studio for the day – when I say “we” it’s actually my assistant, Damon, who does all that. He sets up the lights, runs the camera, runs my audio, and edits the final video. He’s a one-man operation and essentially the producer of each video. I don’t know how he does it but he does an amazing job. But hey, I don’t do nothing. My jobs are: create healthy recipes, put together all the props & equipment needed, come up with a rough script, pick the wardrobe, do makeup, fix hair, and cook the food. Our housekeeper, Antonia, acts as production assistant, clothing adjuster, and recipe adviser since she is a great cook herself. She’s also the one who says, “Don’t forget to preheat the oven.”
Thanks to my awesome video team!
How to Boost Your Immune System
People always ask me why I never get sick. In fact, I have never taken a sick day in my life, never missed a day of work. My immune system seems to be working very well and I credit my healthy diet and lifestyle. I drink a lot of green tea and combined with the healthy foods I eat every day, something seems to be working. Besides eating healthy foods overall, there are certain foods known to boost the immune system and that can prevent a cold or flu.
So I have put those “superfoods” into a video to motivate everyone to keep your immune system strong during cold and flu season. Now you will know what to eat to prevent the flu or avoid a cold. I also think a positive mental outlook makes a difference, too. If you feel a cold coming on, don’t just accept it. Fight back by eating healthy foods to prevent getting sick.
Quick Mac & Cheese
Sometimes, I don’t have time to bake my homemade mac & cheese with the crumb topping but I still want my mac & cheese! So I worked on the easiest, fastest, (healthiest!) way to get some quick mac & cheese into my pie-hole. This recipe has only FOUR ingredients and takes just twenty minutes! It’s lower in fat than most and creamy delicious. Click here for the recipe. – Jenny Jones
Caramel Corn
If you try just one of my recipes, this one is something special. My easy caramel corn has been hugely popular on youtube and everyone who takes a bite asks me for the recipe. Nothing you can buy even comes close to this homemade caramel corn. Mine is not too sweet (so you can eat more!) but I have to stop making it because I cannot leave it alone. Don’t even try to eat just one bite! It’s impossible! Click here for the recipe. – Jenny Jones
Best Pepperoni Pizza Ever!
This is my most viewed video on youtube! If you like a crispy crust and a pepperoni pizza that’s not greasy, this is it. Homemade pizza is such a treat and my healthy pizza has a super crispy crust that comes from using a pizza pan with holes on the bottom, also knows as a pizza crisper, and I use reduced fat turkey pepperoni so it’s a much healthier pizza. If you’re tired of greasy pepperoni pizzas, you must try this recipe. And you will probably agree with me that this is the best pepperoni pizza ever! My trick is in what I do to the pepperoni first… Click here for a printable recipe.
Buttermilk Biscuits
There’s nothing like homemade buttermilk biscuits. My biscuits have only two tablespoons of butter but they taste rich and buttery, especially right out of the oven. Bottom line: I’m not flaky… but my biscuits are! 🙂 Click here for the recipe. – Jenny Jones
Homemade Potato Gnocchi
Homemade gnocchi are a special treat because it’s rare to find them on restaurant menus, probably because they have to be made by hand. But they are so worth the effort and I LOVE, LOVE, LOVE these tender potato dumplings. In Polish, we call them “kluski” and they can be served with anything from meat sauce, pesto, red sauce, browned bread crumbs (Polish style) or just a little butter. Chocolate Pudding
I’m not willing to give up my sweets and this easy healthy chocolate pudding is one of my favorite dessert recipes. It’s a low fat chocolate pudding that’s rich and creamy tasting and you’ll love my little surprise ingredient. This also makes a great chocolate pie filling. Click here for the recipe. – Jenny Jones
