Marinated Beets

Beet Salad

Don't wear white when you're working with red beets! But eat beets because it’s the vegetables with deep colors that have the most antioxidants. Beets have anti-aging benefits and can protect your immune system, liver, memory, heart, and urinary tract. - Jenny Jones

Jenny have you used the yellow beet sometimes to mix in with the red. I think the yellow beet has less flavor than red, but may look pretty here. The flavor might be diminished though. Just a thought.

    Hi Jenny,
What a great tasting super healthy beet salad, yummy ! I also really love boiled, sliced beets tossed in a bit of sour cream . I must have got the idea to do this because I always put a dollop of sour cream in my bowel of borscht . Thanks for sharing !
