Rice with Brussels Sprouts

To slice Brussels sprouts I remove the coarse outer leaves, cut them in half and slice into 1/4-inch slices, discarding the core. For this recipe I use Uncle Ben’s converted rice.

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Makes: 2 servings

Rice with Brussels Sprouts

Ingredients:

  • 1 teaspoon olive oil
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1 cup sliced Brussels sprouts - 1/4-inch thick
  • 1/2 cup long grain rice
  • 1 cup water
  • 1/4 teaspoon salt + pepper to taste

Instructions:

  1. In a saucepan over medium-high heat, sauté onion & garlic for 1 minute.
  2. Stir in Brussels sprouts, rice, water, salt, and pepper.
  3. Bring to a boil.
  4. Cover, reduce heat and simmer for 20 minutes. Let stand, covered, for 10 minutes.

Note: For more servings you can double the recipe.

??Hi Jenny!!! Love you….this recipe looks delicious…my husband loves brussel sprouts and I would like to try it…however would it be OK to add some walnuts or pine nuts to this recipe???? Thank you???

Yes, Vivian, you may add pine nuts. You’re a grownup. But seriously, that sounds yummy. Especially if you toast the nuts first.
