Fruit Pizza

Everyone will remember this dramatic dessert. It’s basically a giant decorated sugar cookie. Soft fruit works best and sliced bananas should be coated with lemon juice to keep from turning brown. Serve within an hour or two, otherwise refrigerate. - Jenny Jones

Cook Time: 15 minutes

Total Time: 1 hour, 30 minutes

Makes: 8 to 10 servings

Fruit Pizza

Ingredients:

    Cookie:
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup butter at room temperature
  • 1/4 cup vegetable oil
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • Spread:
  • 8 oz. reduced fat cream cheese at room temperature
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla
  • Glaze:
  • 1/4 cup marmalade
  • 2 teaspoons water

Instructions:

  1. Preheat oven to 375° F. Grease a 12-inch round or 10 by 15-inch rectangular baking pan.
  2. Using an electric mixer, beat the butter, oil & sugar until smooth.
  3. Add egg & vanilla. Beat for 2-3 minutes until thickened.
  4. On low speed add flour, baking powder, and salt.
  5. Pat dough evenly onto baking pan. Bake for 12-14 minutes until it’s golden brown. Cool completely (about 40 minutes). While mixture cools, prepare fruit, cream cheese spread & glaze.
  6. Spread: On low speed, beat cream cheese, sugar, and vanilla for a few seconds until smooth.
  7. Glaze: Warm up the marmalade & water a little just to soften.
  8. When cookie has cooled, spread with cream cheese mixture.
  9. Decorate with fruit. Brush with glaze.

    I’ve been quarancooking with Jenny’s recipes since mid-March. For my small family, the “stay at home” has created the space and time for me to get back to enjoying cooking after about 6 years of trying to live the rat race and raise my son as a single mom. For his 20th birthday this week, he requested sushi, a fruit tart and/or a chocolate cake. So we ordered a big sushi spread from our neighborhood sushi restaurant and I made both desserts for him using Jenny’s recipes since he can’t celebrate with friends. Jenny’s fruit tart recipe made me realize just how easy fruit tarts are to make! My crust did stick a little too much even though I buttered the Corning Ware pie dish, but the tart still came out beautifully and the family (and my son) loved it. Thank you Jenny!

    I have wanted to make this but it doesn’t say what kind of marmalade, there are many out there?

      I use orange marmalade but there are many other glaze recipes that you can use on my fruit pizza.

    Due to members of the family having dairy allergies, what substitutes do you recommend for the 1% milk and the cream cheese that some of your recipes require?

      I wish I knew but I have no experience with dairy free. If they have allergies, maybe they already have products that they consume that could be used.

        I’m Asian and we use coconut milk and tofu a lot in our dishes. You might try using them as substitutes. Good luck !

    Can u use any jam for a glaze. Not a fan of marmalade?

      Red currant jelly is often used as a glaze and I also like apricot jam but you can use any seedless jam. Look around at other fruit tart recipes for more glaze ideas.
