Marinated Superfoods
There’s so much nutrition in these colorful vegetables. Eat them hot or cold (cold is my favorite). Cruciferous vegetables like broccoli and cauliflower defend against cancer. Use white or purple cauliflower. - Jenny Jones
Ingredients:
- 2 cups of broccoli florets
- 2 cups of cauliflower florets
- 1/2 cup sliced red onion
- 3 Tablespoons fresh lemon juice
- 3 Tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon sugar
- pepper to taste
Marinade:
Instructions:
- Steam broccoli and cauliflower for 5 to 7 minutes.
- Combine marinade ingredients in a small bowl.
- Pour marinade over hot vegetables.
- Add onions and stir. Serve hot or cold.

This is going to sound strange but I use this exact same recipe to add to a black pasta with squid and garlic. The combination is tasty… well, at least to me it is 🙂

I tweek it a bit – instead of fresh lemon juice I used fresh orange juice so it’s not so tart and I added carrots and red peper. I also sauted the onion and garlic. Thanks for the receipe it was mmm mmm good.
What other vegetables would you recommend for this marinade, other than broccoli and cauliflower? Thanks!
You could try peppers, zucchini, asparagus, even potatoes. If you use mushrooms or tomatoes, you would probably do them sliced but uncooked. And then there’s beets. I love marinated beets and I have a great marinated beet salad if you want to try it. It’s done with orange juice and balsamic vinegar.
I’ve tried this and found it delicious! I did add a clove of minced garlic and red pepper flakes but this is something I could have several days a week. Thanks!
