“I am a dessert baker, but baking bread has been on my bucket list. After seeing your recipe, I felt as though this was something I could do. Finding yeast doing a Pandemic was another thing! As a last resort, I called a Cake store where I buy pans and cupcake liners and they had it. After seeing three small packs on eBay for almost $50.00, I had no idea what to expect. When the store owner told me the yeast was in a one-pound bag, I was hoping it would not be astronomical. $3.69 later, I was on my way to the Italian store to buy corn meal. If anything good could come out of our current worldwide quarantine it’s that people are learning how to cook. It’s given us a chance to either learn or to teach our children this important life skill. That’s why my pick this week is this photo of 9-year old Svea, whose mother sent it in, showing Svea taking pride in this chocolate cake she made all by herself for her family in Minnesota. I hope this inspires other young people to discover the joy (and value) of cooking. ❤️
It may sound crazy but I love grocery shopping. I like to take my time, meander down the aisles, see what’s new, what’s on sale, what the produce guy just rolled out, and I miss that. I miss my favorite checker who always says, “Hi, Jenny.” She’s from Russia and says she learned how to speak English by watching my talk show. I miss her too. And I worry about her because she is an essential worker, close to my age, and is still working now.
It’s not easy getting groceries so I’ve been cooking and freezing as much as I can. Last night I made my two favorite casseroles to freeze in portions. Left is my baked ziti and right is my angel hair casserole. The ziti is made with a meat sauce and three Italian cheeses and the angel hair casserole uses beef, mushrooms, and cheddar cheese. They are both family favorites and luckily they freeze well. I cut them into serving portions today and froze them so we can still have our favorite meals as getting groceries continues to be a challenge.

I made it to 77 with only the cooking skills to sometimes microwave oatmeal in the morning and burn an occasional hotdog or hamburger on a barbeque grill. Then the pandemic struck and awakened my irrepressible craving for daily fresh bread.
Rather than risk the remaining life I still cling to with dangerous forays to germ-laden supermarkets or bakeries, I searched YouTube to see if it was conceivable for someone with a complete lack of cooking skills to bake bread at home. Luckily yours was the first video I stumbled on — which shows that no amount of careful planning beats dumb luck.
Repeatedly I watched your no-knead bread-making video, chuckling each time at your cute remark about cleaning the writing off the baseball (as a good studio audience is supposed to do) and gained the courage to meticulously follow your technique. The result astonished me! I quickly and easily made the most delicious fresh artisan bread I’ve ever savored. Worthy of even the most pretentious boulangerie.
Now I have delicious fresh artisan bread every day. And you emboldened me to cook other things. I made your quick pizza. It’s better than my favorite pizza parlors (to say nothing of delivery pizza where you might get more sensual pleasure from eating the cardboard box it arrives in). Just so you know, I was raised in Nu Yawk City, so I really know good pizza.
With your online guidance I’m cooking and baking the foods I love, and love doing it. You’ve taught me how easy, fun and delicious It is to cook and bake. Candidly, I simply can’t believe that I can do this.

In my latest baking, instead of using (hot) tap water, I substituted the saved (reheated) water from boiling potatoes. The starch from the potatoes added a “nice” flavour to the no knead bread & created a most delicious bread. I used my Kitchen Aid cast iron pot (fm CTC) but upped yr ingredients to 1 1/3 times eg 4 cups flour, 2 C potatoe water etc to fill my oval pot. Ciao fm Kitchener.”

“Hi Jenny, I made your chocolate zucchini cake recipe. I tweaked it, using half a cup of coconut flour in place of regular flour. I think my zucchini was a bit dry and added a couple of tablespoons of water. I think I might add 2 tablespoons of cream cheese to add a little more moisture to the mix. Or serve with a dollop of whip cream or vanilla ice cream. I also used a bundt pan – will need to double the recipe to have it a traditional size bundt cake. Mine is a little shorty as you can see! “I Think it’s the Aldi Yeast ?- Well, bummer. I have tried Whole Foods to Fresh Market, Publix to Kroger, Sprouts to Walmart, Target, and beyond. NO yeast to be found, but finally found some at Aldi. Alas, no Gelson’s here and I don’t know if this yeast is old because the date is funky plus it’s made in Turkey! Oy vey. Anyhoo, this is the wheat bread rise after 45 minutes. Bummer! What a waste. My only suggestion is to proof the yeast (google “how to proof yeast” and maybe it will be good and something else was the problem, possibly the liquid wasn’t warm enough. Meantime, you could still leave it out overnight to see if it rises (nothing to lose). ?~ jenny“Well, it’s a miracle! ~ What a beautiful pie, thank you! I reheat by putting foil inside the pan and pushing it up against the exposed filling so the filling stays put, and I leave the top crust exposed. I put it in a 350 oven but don’t remember for how long. I hope that makes sense. ~ jenny

“Hi Jenny, I tried your recipe today and it came out amazing! It’s my first time making bread and I wanted to thank you for your truly forgiving dough recipe. I wanted to share the photos with you:
Lighter loaf farther from camera was made following your recipe
Darker loaf closer to camera is made with 2 cups AP flour + 3 cups oat flour + 2 cups hot water + 1/2 tsp yeast + 2 tsp salt (I used oat flour because I ran out of AP flour, but the result was still amazing! Just a little denser, moist, and didn’t rise as much – tasted like wheat bread)
Just a note: I didn’t have a dutch oven, so I used regular soup pots that were oven safe, and then covered the top with foil – here are the results below”

“Hey Jenny..been making no knead bread (ones you let rise overnight) for couple years. But yr recipe is so much simpler & FASTER, with wonderful results. I use an oval Kitchen Aid cast iron pot – like the shape better than round – but upped yr ingredients by 1 1/3 times ie 4 cups flour etc, to fill my pot. Increased quantities work fine. Shaping the parchment paper into the oval shape (folds around perimeter) results in all sorts of interesting ridges on sides, as the dough shapes itself into it. Didn’t re-watch your video before I started…..remembered that you put the egg wash on the (crust) pan ….hey, it was white!and I guess the cast iron pan was from another video. “Hi Jenny! I discovered your YouTube channel and made this bread for the first time based on your No Knead Bread recipe. I divided it into two parts because I have a smallish Dutch oven and I only have a convection toaster oven available at my apartment. I made modifications to the recipe by including black olives and pepper Jack cheese and topping one of the loves with Maldon salt. Both came out so yummy that my boyfriend and I ate them all in the same evening. I love your colorful kitchen set up and your enthusiasm for what you make shows through in your videos and is very inspiring. Warm regards, Fé.”
