Feb 13, 2013Making a video at home
It’s always fun to make cooking videos at home and today was the day. We turn the kitchen into a studio for the day – when I say “we” it’s actually my assistant, Damon, who does all that. He sets up the lights, runs the camera, runs my audio, and edits the final video. He’s a one-man operation and essentially the producer of each video. I don’t know how he does it but he does an amazing job. But hey, I don’t do nothing. My jobs are: create healthy recipes, put together all the props & equipment needed, come up with a rough script, pick the wardrobe, do makeup, fix hair, and cook the food. Our housekeeper, Antonia, acts as production assistant, clothing adjuster, and recipe adviser since she is a great cook herself. She’s also the one who says, “Don’t forget to preheat the oven.”

It’s my Caramelized Apple Pancake recipe that’s oven-baked and served upside down and it’s crazy good! Once you try this easy recipe, you won’t wait for the next Valentine’s Day to make it again. It’s one of my favorite weekend breakfasts (or it is breakfastses?) It looks beautiful and is surprisingly easy to make… and healthy of course.

Ranee can’t find whole grain pastry flour
Hi Jenny, I love all your recipes. I would like to know where can I buy the whole grain pastry flour to make the chocolate chip pizza. I didn’t see it in my local supermarket. Is there a certain brand I need? I look forward to your new cookbook. Thanks Jenny.
My Response…
Only some grocery stores carry it but I can always find it at Whole Foods. My grocery store carries Arrowhead Mills brand but only sometimes. If there’s not a Whole Foods in your area, check with any health food store or you can always order it online. Look for either “whole grain pastry flour” or “whole wheat pastry flour” as they are both good sources of B vitamins and fiber. When baking cookies, I try to replace at least some of the white flour with whole grain pastry flour or when possible, I’ll use all whole grain flour (like with my oatmeal cookies, which are 100% whole grain). One more thing… all whole grain flours must be stored in the fridge.
Browned Cabbage Rolls
I’ve decided to make my fantastic cabbage rolls for my next video. It’s one of my best dinner recipes which I learned from my dad who made this traditional Polish dish all the time. My favorite way to serve them is browned in a little olive oil with a dollop of sour cream on the side. My Polish cabbage rolls video should be up in the next couple of weeks. Greek Lemon Potatoes
I made chicken cutlets tonight with Greek lemon potatoes. How much do you love Greek food? My stepmom is Greek and I grew up loving this healthy recipe. Greeks use lots of olive oil, oregano, and lemons. So these potatoes are roasted in lemon juice and chicken stock with onion, garlic, and spices… and heart-healthy olive oil of course. Show some love to the pork tenderloin! It’s one of the leanest (and cheapest) meats around and it cooks really quickly. It’s always tender as long as you don’t overcook it, so a meat thermometer is very useful here. My marinated pork tenderloin comes out so tender and flavorful and this easy recipe takes very little work. Everything cooks in the oven at the same time… in 30 minutes! I love all-in-one meals and besides the good-eatin’ combo of spiced up pork and roasted veggies, the leftover pork slices up into some awesome sandwiches! – Jenny Jones
